    Smoked Turkey Breast

    Delicious, easy whole smoked turkey breast with just a few simple steps! This is a smoked turkey WITHOUT BRINE for no mess or extra planning. An overnight dry rub and a few hours in the smoker produce the most delicious, juicy turkey breast ever!

    One thing about turkey: people either love it or "meh" it and really love sides. I fall on the "sides are preferable" side (lol) of things generally, unless the turkey is really freaking good.

    And let me say this: smoked turkey is really freaking good.

    (although, if you don't have a smoker, I have a roasted turkey breast and foolproof whole roast turkey that are also really, really good!)

    I LOVE smoking turkeys for Thanksgiving or Christmas. The benefits are endless: the oven is free for side dishes to bake, and the low + slow way the smoker works means that the turkey stays super flavorful and juicy.

    Greek Chicken Thighs

    Delicious broiled chicken thighs with Greek chicken marinade! This version of honey lemon chicken has a quick and easy marinade and is done in under half an hour because the chicken is broiled quickly. Serve these on their own, in pita for chicken gyros, or as part of a Mediterranean charcuterie board!

    This has recently become one of my favorite ways to serve chicken, especially in the summer - Greek-style with tangy tzatziki sauce, broiled in the oven for a quick and easy weeknight dinner situation.

    Greek flavors are some of my favorites, and I love a whole meal that is lemony, oregano-y, and honey-esque.  Lemon, honey, olive oil, garlic, and oregano are cornerstone flavors of Greek food and can be mixed and matched in a thousand ways to create different dishes!

    Easy Crockpot Butter Chicken

    Indian butter chicken in a slow cooker! This super delicious crockpot chicken curry has just 10 ingredients and no searing or extra chopping. The end result is luscious, creamy, delicious butter chicken with hardly any effort.

    Hello, HELLO. I have been dying to tell you about this, 90s-sitcom-drama style.

    The thing about Indian curry dishes is that they are not known for their ease of making. The really good ones have lots of ingredients, whole spices, hours of simmering, and generally lots of things that making cooking really fun, in my opinion.

    BUT. Sometimes we want curry tonight. Now. Fast. Not a lot of fuss. The crockpot is an ideal cooking vessel for long-cooked stuff that needs time to develop flavors, and I love it because it can (probably, mostly) be left on while we leave the house or wander off to do other things. No checking, stirring, adjusting liquid levels, just easy crockpot chicken curry with 10 ingredients.

    Chicken Cordon Bleu Meatballs

    Favorite chicken cordon bleu flavors in these utterly delicious and simple Chicken Cordon Bleu Meatballs! Lean ground chicken and a little Swiss cheese get blended quickly with some ham (leftover glazed ham or deli ham!) and easy pantry spices for major flavor in this tender ground chicken meatball. There's an easy sour cream dip with mustard for dipping + extra credit.

    These are chicken balls with ham and cheese. 

    They were, as all good ideas on this blog are, Jay's idea, and they were a fantastic one. I love the nostalgic flavors of chicken cordon bleu, crispy exterior, gooey interior, but the process is pretty arduous and a meatball is just so friendly and celebratory, right?

    For the sake of holidays or parties, you can totally make these in advance, bake them, then reheat them in the oven until the cheese melts again so all the mess + raw meat nonsense can happen well in advance of serving these. 

    The ingredients are simple, and you can use deli ham or leftover holiday ham from Easter or Thanksgiving if you ever have any lying around.

These can be pan-fried OR baked, and both cooking methods result in crispy, juicy chicken that is absolutely delicious. Think of this as a grown up version of my baked breaded chicken tenders.

    Crock Pot Tortellini Chicken Soup

    One of our favorite all-the-time slow cooker soups, tortellini chicken soup! This is a super easy, all-in-one dish with pasta, chicken, and spinach. There's no searing, hardly any chopping, just one Crock Pot, a few hours of waiting, and dinner is done! This is not terrible at ALL with some homemade focaccia with pizza dough for dunking.

    I absolutely can't believe it, but almost exactly one year ago my sister and brother in law came over and brought dinner, a slow cooker tortellini situation with chicken and tomatoes and cream. It was delicious.

    I can see the future, basically? OR, more likely, the best recipes are the kind that work all the time, even in pandemics.

    What we have here is: A crispy chicken dealio, made gluten free because cornstarch, PLUS the cornstarch makes the chicken EXTRA crispy without any overly annoying breading, you're welcome for that.

    Then we have a glossy sauce with orange juice, ginger, soy sauce, and stock. Broccoli for balance. Rice for ... more balance.

    Easy Homemade Baked Chicken Tenders

    My favorite kid-friendly meal prep dinner! This recipe for healthy baked chicken tenders has just a few ingredients and is super easy to make. Bonus, you can freeze the breaded tenders and bake them right before serving for a quick + fun weeknight freezer meal!

    THEY'RE JUST LIKE FRIED.

    Ha. Ha. No, no they are not. Sorry, not here to lie to you.

    Here are the ways that easy homemade baked chicken tenders are not like fried chicken tenders:

    • they do not stink up your house with oil smell or cause third degree burns.
    • they have fewer calories.
    • they are done quickly and are great for meal prep, freezer meals, or leftovers.
    • they have a parmesan coating that is just YUM but no batter to get all over everything.

    So, what I'm saying is that MAYBE baked chicken tenders are better than fried chicken tenders? In like 3 cases, but I'd say that at-home no-frying situations are preferable from a mess standpoint FOR SURE.

    Easy Chicken Larb

    This Thai chicken larb recipe (sometimes seen as chicken laarb on menus!) is so quick and easy thanks to the use of ground chicken. We love making this for meal prep with extra dressing and using it on salads or in rice bowls all week. It's gluten free and wildly delicious thanks to a fish sauce lime vinaigrette.

    Jay usually does some kind of January ... eating thing ... which, is fine. I could go on and on about how I don't do things like that for a variety of reasons that I feel strongly about, but I'm also happy to support people in my life that try to make healthier choices.
