Greek Yogurt Coleslaw with Poppyseed Dressing

    June 10, 2022 by Lindsay 7 Comments

THE BEST slaw for fish tacos recipe ever! Just 6 ingredients make this creamy, tangy, no mayo coleslaw one that you'll make again and again. I love this over fish tacos with peach salsa and sour cream guacamole, or with a grilled chicken dinner!

white bowl of poppyseed slaw with Greek yogurt on wooden board with floral napkin.
white cabbage slaw on brown board.

Will has started to do this thing where if he is unsatisfied with something I offer for a snack he gives me a texture clue as to what he really wants. So if he wants yogurt it's "I want something smushy," pretzels "I'm thinking of a cwunchy snack," and so on. It's hilarious, and I have no clue where he came up with it.

BUT, what I'm thrilled he's figured out is this: foods need different textures. So if we're talking about a soft fish taco, some crunchy slaw to top it is exactly the key to wake it up a little bit.

This particular slaw goes with just about anything: on top of BBQ sandwiches, in fish tacos, as a side dish to grilled chicken with corn on the cob. It's great with any cabbage you like, and the dressing is also delicious on green salads!

    May 23, 2022 by Lindsay 5 Comments

Ohhhhhhhh long weekend, I am so excited for you.

cooked grilled shrimp on grill pan with lemon slices

We are in a weird busy all the time no time to breathe place. This time last year there was a decided air of "but are we allowed to do anything," and now it's a little....lighter.

Lighter for us, though, means HERE ARE 15 SCHOOL THINGS YOU NEED TO ATTEND IN THE MIDDLE OF THE WORKDAY. Which is very cute and fun and also very time consuming. #childrenareablessing

In preparation for whatever you might be doing this weekend, hopefully with lots of relaxation and folks you love, here are my absolute favorite recipes for Memorial Day!

Salmon Rice Bowl with Maple Mustard Sauce

    April 21, 2022 by Lindsay 7 Comments

Delicious, easy salmon rice bowls in less than 30 minutes. Perfect for an easy dinner or fast lunch, use your favorite green veg (this 5-minute asparagus is great!) and rice or rice substitute. Creamy maple mustard sauce has just 4 ingredients and can be made in advance for an even faster preparation for this yummy rice bowl!

white bowl with blackened salmon, rice, and broccoli

Hello and welcome to "this is a dinner that is very easy to make in half an hour, trust." Aka my favorite kind of recipe.

When it comes to dinner, a salmon rice bowl (or any kind of salmon with rice dinner tbh) is something that we eat AT LEAST once per week. I buy salmon, we always have rice, and then we think on what we want the bowl to taste like - Asian sticky soy sauce, sundried tomatoes over everything, or lemon butter because lemon butter is pretty much always the answer.

    2-Ingredient Pink Pasta Sauce

    March 23, 2022 by Lindsay 5 Comments

The most delicious easy pink pasta sauce recipe! Just two ingredients make this creamy tomato sauce come together FAST (in the time it takes to boil noodles), and you can serve it plain or add anything you'd like to flavor it. Prepare for this to be your new favorite weeknight recipe!

skillet with wooden spoon and parsley-topped pink pasta.

Let's prepare for some pink pasta magic, shall we? Two ingredients, fifteen minutes, DINNER.

This is one of those suuuuuuper kid-friendly dinner recipes that came out of necessity; I wasn't interested in making marinara or another more complicated pasta recipe, and we needed dinner asap. (thank you weeknight sports) Canned tomato sauce + heavy cream saves the day!

    Greek Meatballs with Tzatziki Sauce

    March 17, 2022 by Lindsay 11 Comments

The most foolproof Greek meatball recipe! Beef meatballs with just a little bit of filler, tons of flavor from lemon and oregano, with tzatziki for dipping. Make your own tzatziki sauce, or use your favorite storebought brand!

pile of greek meatballs with cucumber slices and fresh mint.

Omg meatballs are just so good, right? Seriously.

I find that when feeding people, meatballs are one of those "easy but a little special but also everyone likes them" recipes that are fun to make, hard to mess up, and can be made in advance. LOTS of good stuff there, right?

(Bonus points for meatballs being a nice kid friendly dinner aka pick it up with your hands, I don't have time to cut up your food 17 times a day.)

    Fresh Peach Jalapeno Salsa

    March 11, 2022 by Lindsay 10 Comments

Delicious, refreshing homemade tomato peach salsa! This recipe is made right in the food processor and can be made with fresh or canned peaches. The tomatoes, peaches, and jalapeno combine with lime juice for delicious, bright flavor that is delicious on chips served next to sour cream guacamole for a fun party platter.

peach jalapeno salsa with pale white chips.

Ok, where do we fall on fruit in our salsa? I am team YES to pineapple pizza, YES to fruit in salsa, all the sweet/savory combos in the world.

This peach salsa is super simple because we make it right in the food processor, aka NO CHOPPING. The end result is somewhere between a salsa and a peach pico de gallo - fresh, light, with TONS of flavor.

I make this all the time to have as a snack with a cookout or pool party situation, but it's also a really great topping for fish tacos or weeknight seared salmon - a little fresh, islandy vibe even in colder months.

(PS, you can definitely make this with canned peaches year round!)

    Goat Cheese Flatbread Pizza

    February 23, 2022 by Lindsay 4 Comments

Delicious, super easy flatbread pizza recipe with goat cheese and caramelized onions! Tons of texture, flavor, and options to customize storebought flatbread pizzas! Caramelizing the onions takes a bit of time, but after that these flatbreads are done in 15 minutes.

flatlay pink plate with flatbread pizza slices and white napkin.

Ok, let's talk flatbread pizza recipes: For years and years and years this was one of our late-night go-to dinners, back in the days when there were no kids and yoga at 7pm on a Tuesday BEFORE eating dinner and going out to trivia and then work at 7am the next day seemed totally normal.

    Because it was, sigh.

This particular version of flatbread pizza is SO good, a little elevated (although a kid-friendly equally yummy fake pizza is this pizza quesadilla which we love!), and so simple to make. Caramelize some onions, grab some sundried tomato pesto, cheese, olives, DONE.

    12 Valentine's Day Pasta Recipes

    February 9, 2022 by Lindsay 9 Comments

The best Valentine's Day 2022 date night starts with pasta! Here are my favorite Valentine's Day Pasta Recipes to make at home.

lobster with pasta and lemon in white ceramic skillet.

Are you celebrating Valentine's Day this week? Weekend? Ever? Never?

We technically celebrate our dating anniversary on V-day, but after a gazillion years together we....I have no idea...anymore. Mainly because I travel a lot this time of year (well, in a regular year, which this is STILL not) and two times we had a newborn at Valentine's Day, and while I'm cool with a dating anniversary and a wedding anniversary as an excuse to hang out, it's definitely nothing mandatory for us anymore.

22 Super Bowl Snack Ideas for 2022

    January 26, 2022 by Lindsay 5 Comments

More than 22 DELICIOUS, easy Super Bowl 2022 Recipe Ideas! Whether you're doing a few cheese and cracker types of things or a full chili bar, here's all the best Super Bowl recipes in one place.

Gray plate of guacamole topped with cucumber relish and crushed peanuts.

...because otherwise tbh football is a waste of damn time. (don't. it's fine.)

So! Let's plan our party snacks for Super Bowl Sunday. I love a theme sometimes, like tacos with tons of toppings, pasta, or chili with ALSO ton of toppings, but I also love making a few really good snack foods that don't necessarily go together.

I mainly like Super Bowl recipes that can be made in advance and can be eaten at room temperature or warm-ish. Nothing that has to be straight out of the oven, although there are a few dips and chilis in this list that are great kept warm in the slow cooker.

    Cheddar Jalapeno Cornbread (Jiffy!)

    January 24, 2022 by Lindsay 13 Comments

It's a box of Jiffy, a few pantry flavor ingredients, and suuuuper elevated jalapeno cornbread in just 30 minutes! I love these for dunking with no bean beef chili or vegan chipotle sweet potato chili.

close up jalapeno corn muffin on wire rack.

Years and years ago, I made chili on a weekend to eat throughout the week, and one night Jay made these delicious corn muffins to go with it. How's THAT for a succinct "everyone hates food blog stories" story?

The mix is regular old less-than-a-dollar Jiffy, but the add-ins are what makes it really special! You can add almost anything you like to a baking mix like this to change it up and make it your own!

Boxed cornbread mix is so convenient to keep around: homemade cornbread is so special and delicious, but there are definitely times where we need cornbread FAST without a lot of thinking. Enter: Jiffy.

Easy Meatloaf with Onion Soup Mix

    January 11, 2022 by Lindsay 7 Comments

DELICIOUS, savory homemade meatloaf with Lipton onion soup mix! Simple ingredients and some time in the oven make this one of the most foolproof homemade meatloaf recipes out there. The almighty packet of onion soup gives us another winning recipe!

close up image of plate with meatloaf and mashed potatoes.

Ok, let's talk about shortcut ingredients.

Seasoning packets, canned cream-of-xx soups, bottled sauces for slow cooker meals? THEY ARE ALL AMAZING.

And yet, there's a little pocket of humanity that's all "I prefer to make my own, use natural ingredients, shit all over your shortcuts in the name of my clean-eating ego."

Well, no offense to those folks, but pre-made ingredients are AMAZING and can coax some really yummy flavors out of very regular foods.

Example: ranch dip seasoning sprinkled all over chicken before grilling. Definitely do that.

Creamy Spaghetti with Mushrooms and Bacon

    December 30, 2021 by Lindsay 9 Comments

A 10-ingredient pasta dinner that is done in about 30 minutes! This DELICIOUS creamy bacon pasta is so simple to make and has delicious seared mushrooms in a creamy bacon-laced tomato sauce. Delicious for a weeknight, weekend entertaining, or an easy holiday meal! I like this with an easy green salad and focaccia for dipping in extra sauce.

close up top view bacon spaghetti.

You know how bacon is good on, like, everything?

It's true. Adding even just a little salty, crispy bacon to spaghetti with mushrooms is juuuuust the little nudge into winter dinners we need to get us through the next few cold weeks (or months depending on where you live!)

I love this spaghetti, and I make it all the time. It's a really simple base of seared bacon bits (buy the thick cut kind if you can!), mushrooms browned in the bacon fat (hello), and a creamy tomato sauce that comes together really quickly. The sauce itself is done in just about the time it takes to boil water for pasta, giving us a 30-45 minutes to dinnertime situation.

    Chocolate Chess Pie

    December 21, 2021 by Lindsay 8 Comments

Delicious, super easy creamy chocolate chess pie in under an hour! This recipe has just 7 ingredients and is so simple to make with the help of a storebought crust! PS, if you have extra evaporated milk, it can be used in slow cooker butter chicken or other creamy savory recipes!

chocolate chess pie slice on white plate with fork.

Tis the season to make a pie so delicious you may or may not consume 2 pieces in twelve hours just to be sure it was that good.

    It was, promise.

Ok so this pie. Vague origin story. I actually didn't know what a chocolate chess pie WAS, but this local grocery/bakery that we frequent makes them around the holidays and they always looked really enticing in pretty bakery boxes. Then I ended up with a few extra pie crusts after Thanksgiving (my apple pies didn't require a top crust because I didn't have as many apples as I thought, long story), and I knew I needed a new Christmas pie. Enter: Chocolate Chess.

Jalapeno Corn Dip with Cream Cheese

    December 9, 2021 by Lindsay 10 Comments

Delicious, easy hot corn dip with cream cheese and jalapenos with just 7 ingredients. Vegetarian, gluten free, and PERFECT for any party or appetizer need! I serve this with Fritos scoops because FRITOS SCOOPS, but it's also really delicious scooped onto tortilla chips or no-knead bread if you're feeling fancy.

oval baking diwh with cheesy corn dip topped with pickled jalapenos.

...with only 7 ingredients!  A few basic things, mix, bake, scoop into your open trap.

This corn dip is one of those creamy, super simple classic hot dips that is so perfect for almost any occasion.

I've made this twice in the past 2 weeks, for different crowds, and both times it's been met with massive acclaim and very few leftovers, which is my main measure for success. It's a little sweet, a little spicy, a lot creamy, and the easiest of all the easy dips.

I use frozen corn and jarred jalapenos, BUT I've also added a chopped fresh jalapeno on instances where I wanted more spice. So, feel free to upgrade your ingredients if that sounds fun to you!

Yukon Gold Mashed Potatoes with Roasted Garlic

    December 1, 2021 by Lindsay 8 Comments

Creamy, luscious 5-ingredient Roasted Garlic Mashed Potatoes! These come together in under an hour, but the roasted garlic can be made in advance for even more hurried nights. These are very delicious with a cast iron skillet steak and some 5 Minute Asparagus, just saying.

bowl of mashed potatoes with butter swirl on blue napkin surrounded by Thanksgiving foods.

Oh, hello 5 ingredient steakhouse-worthy side dish that is the absolute love of my life.

It's the best ever mashed potatoes (with skins!), it's roasted garlic, it's buttery, creamy, comforting goodness.

There are a gazillion ways to make mashed potatoes, and IMO almost all of them are great. I love a super silky mashed potato (why does it remind of me of kind of a janky cruise?), but I also love a little bit of texture from potato skin and potato chunks.

Mashed potatoes are wonderful because gluten free potato recipes are easy to come by and almost universally adored, which means that lots of eaters can enjoy mashed potatoes. Also they're just supremely yummy, so there's that.

    Vidalia Onion Casserole

    November 15, 2021 by Lindsay 13 Comments

Make onions the STAR of the show with this classic Southern onion casserole! This version uses sweet onions, has 9 ingredients, and can be made in advance for a yummy weeknight side dish with grilled chicken or as part of a Thanksgiving or Easter dinner. Bonus points for this being a Ritz Cracker topped casserole! (aka the best kind)

close up of ritz cracker topping on onion casserole.

Onion casserole. Heard of it? Had it? It's new-ish to me; my MIL brought us a version she made earlier this summer with just "I'm bringing onion casserole" and I just immediately knew I had found my new favorite veggie side dish.

I love a casserole, as we well know. I also really like onions, and sweet onions + cheesy stuff + Ritz cracker topping? Count.Me.In.

    BEST Easy Asparagus Casserole

    November 1, 2021 by Lindsay 64 Comments

Super easy and healthy asparagus casserole that comes together in just a few steps. This is perfect for Thanksgiving, Easter, or any meal that needs a yummy low carb side dish! This is one of my most popular recipes with over 200k clicks, likes, shares, and saves!

white plate with serving of cheesy baked asparagus on a blue napkin.

When it comes to Thanksgiving, there's a balance of "we always have that," and "let's try something new," you know?

This is the BEST asparagus casserole ever, but I'd also venture that it's the best Thanksgiving side dish ever. It's the perfect line between "super classic" and "a little updated," and let's just take a moment to bow to the Casserole Gods of Thanksgiving. They love us, and we love them.

So. Easy asparagus casserole! The fancy feeling of a veg that isn't green beans with the comfort of cheese and Ritz crackers.

Crock Pot Stuffing with Sausage and Apples

    October 20, 2021 by Lindsay 11 Comments

One of the most delicious versions of classic Thanksgiving stuffing made in a slow cooker! Just 10 delicious ingredients cooked for a few hours while you make the rest of your Thanksgiving dinner. This is a great dish to prep in advance and take to a friendsgiving, too!

top view of slow cooker sausage stuffing with apples and celery.

We've definitely talked about this before, but where do we fall on turkey vs sides at Thanksgiving? I am Team Side Dishes all the way - I like turkey OK, but honestly side dishes are my favorite thing about Thanksgiving, hands down.

I've worked on stuffing recipes for years, and I think for me the key is a good ratio of crusty bread to buttery drizzle - no mushy bread, no mealy texture, actual delicious, buttery bread cubes with flavorful ingredients mixed in.

    Smoked Turkey Breast

    October 14, 2021 by Lindsay 13 Comments

Delicious, easy whole smoked turkey breast with just a few simple steps! This is a smoked turkey WITHOUT BRINE for no mess or extra planning. An overnight dry rub and a few hours in the smoker produce the most delicious, juicy turkey breast ever!

plate of sliced smoked turkey with rosemary garnish on navy blue napkin.

One thing about turkey: people either love it or "meh" it and really love sides. I fall on the "sides are preferable" side (lol) of things generally, unless the turkey is really freaking good.

And let me say this: smoked turkey is really freaking good.

(although, if you don't have a smoker, I have a roasted turkey breast and foolproof whole roast turkey that are also really, really good!)

I LOVE smoking turkeys for Thanksgiving or Christmas. The benefits are endless: the oven is free for side dishes to bake, and the low + slow way the smoker works means that the turkey stays super flavorful and juicy.

    Vegan Marinated Mushrooms

    September 30, 2021 by Lindsay 7 Comments

One of our favorite vegan mushrooms, these vegan marinated mushrooms are SO YUMMY and the perfect vegan appetizer to add to a party spread! They have just a few pantry ingredients and are done in 30 minutes, but last for weeks in the fridge!

hand holding a marinated mushroom on a toothpick over open jar of mushrooms.

    I. Love. Mushrooms. Like, a lot a lot.

These mushrooms in particular will always and forever remind me of Christmas, even though my family never had them. I think this is a total throwback recipe, 80's or 90's or something - did you eat these as a kid? My next door neighbors in Japan made these for almost every holiday, and I LOVED them. I think they used Italian dressing and canned mushrooms, no shame in that game, and the chewy mushroom in the tangy vinaigrette was just my favorite thing ever.

I'm all about anything tangy or pickled, and I think these are such a great addition to a holiday party. They're so light and bright and a perfect complement to the heavier dishes that we have this time of year. I like having them as part of an appetizer spread with some pimento cheese or buffalo chicken dip; they're vegan and gluten free so everyone can enjoy them.
