    Crock Pot Stuffing with Sausage and Apples

    One of the most delicious versions of classic Thanksgiving stuffing made in a slow cooker! Just 10 delicious ingredients cooked for a few hours while you make the rest of your Thanksgiving dinner. This is a great dish to prep in advance and take to a friendsgiving, too!

    We've definitely talked about this before, but where do we fall on turkey vs sides at Thanksgiving? I am Team Side Dishes all the way - I like turkey OK, but honestly side dishes are my favorite thing about Thanksgiving, hands down.

    I've worked on stuffing recipes for years, and I think for me the key is a good ratio of crusty bread to buttery drizzle - no mushy bread, no mealy texture, actual delicious, buttery bread cubes with flavorful ingredients mixed in.

    Easy Crockpot Butter Chicken

    Indian butter chicken in a slow cooker! This super delicious crockpot chicken curry has just 10 ingredients and no searing or extra chopping. The end result is luscious, creamy, delicious butter chicken with hardly any effort.

    Hello, HELLO. I have been dying to tell you about this, 90s-sitcom-drama style.

    The thing about Indian curry dishes is that they are not known for their ease of making. The really good ones have lots of ingredients, whole spices, hours of simmering, and generally lots of things that making cooking really fun, in my opinion.

    BUT. Sometimes we want curry tonight. Now. Fast. Not a lot of fuss. The crockpot is an ideal cooking vessel for long-cooked stuff that needs time to develop flavors, and I love it because it can (probably, mostly) be left on while we leave the house or wander off to do other things. No checking, stirring, adjusting liquid levels, just easy crockpot chicken curry with 10 ingredients.

    Crock Pot Tortellini Chicken Soup

    One of our favorite all-the-time slow cooker soups, tortellini chicken soup! This is a super easy, all-in-one dish with pasta, chicken, and spinach. There's no searing, hardly any chopping, just one Crock Pot, a few hours of waiting, and dinner is done! This is not terrible at ALL with some homemade focaccia with pizza dough for dunking.

    I absolutely can't believe it, but almost exactly one year ago my sister and brother in law came over and brought dinner, a slow cooker tortellini situation with chicken and tomatoes and cream. It was delicious.

    We joked about how school would probably be cancelled starting that Monday (they're both teachers), joked about handwashing, joked about...everything.

    About 36 hours later the entire world shut down and we didn't see each other for months.

    Super Easy Slow Cooker Chicken and Dumplings (with gnocchi!)

    Crockpot Chicken Gnocchi Soup is just like chicken and dumplings with gnocchi as the dumplings! I use bone in, skin on chicken pieces for tons of flavor, but any chicken you have or like works perfectly in this great make ahead winter slow cooker recipe. Make a super easy kale salad to go with this if you'd like!

    Because literally no one that I know has time to make dumplings this time of year, and I know people who cook a lot. I cook a lot!

    But sometimes cooking to eat is different than long laborious project meals, which are SO much fun but also this time of year maybe not so much. BUT (imma see if I can start every sentence with that word), we still obviously want the food that tastes like it took 8 hours and a touch of your sanity to create, you know? At least I do. Food that cooks for a long time tastes wonderful, has deep flavors, and is so comforting when it's a stew or soup like this is.

    Slow Cooker BBQ Chicken

    This slow cooker bbq chicken is so easy and delicious! It's one of our favorite recipes for easy weeknight meal prep and can be used with chicken thighs or chicken breasts - use whatever you have! This can be made with the easy homemade barbecue sauce recipe below or your favorite storebought barbecue sauce!

    Because summer! 

    I've probably mentioned here before that Jay's favorite sauce is barbecue.  A cross between tang and sweet, but he'll use the dark red bottled stuff in a pinch.  I think that stuff is gross (always too sweet, never spicy), but I do like making my own easy homemade bbq sauce, especially in the summer.  

    This recipe is nothing earth-shattering, but dumping a bunch of stuff in a slow cooker and letting a sauce form while chicken cooks is a killer trick to have at the end of the school year when you're so.close. to the finish line and it's getting warm and no one has any motivation but also you still need to eat dinner, you know?

    Weeknight dinner ideas, I'm here for all of them. 

    So here goes.  Stuff gets dumped in with chicken, you go finish a project that your kid forgot about until just this instant, then you eat a BBQ chicken sandwich because you've earned it.  Add a beer or 4 and call it a night.

    Mexican Crockpot Shredded Beef

    This flavor-bomb Mexican shredded beef recipe is made right in the slow cooker for no-fuss, super tender beef that is ready whenever you are. Pair it with Mexican red rice and pepita salsa for an easy Mexican feast!

    aka your new favorite meat aka IT'S ALMOST CINCO DE MAYO!  

    I have a few other new things on deck for you this holiday (deck = what Beck calls herself these days), but this is probably my favorite new Mexican-inspired dish this year.  Mainly for the ease + big flavors it creates.  Beer, tomato sauce, and tons of spices make the best drippings, and we toss them with the beef at the end once we shred it.  

    I also go against my own rule of SLOW COOKER MUST ONLY INCLUDE SLOW COOKER and sear this to almost burnt in a cast iron skillet.  It's not always necessary, but for this application I do think it adds some great crusty bits to the finished shredded beef dish.

    Crockpot Chicken Taco Soup

    Crockpot chicken taco soup with fresh veggies and beans + your own homemade taco seasoning. This soup is super quick to make and keeps really well in the fridge or freezer for leftovers! For a party, make a batch of sour cream guacamole for dipping and scooping on top of this Mexican chicken soup.

    I really like Mexican food, is what I'm trying to say.  Mexican and Indian are two food types that I could truly eat every day without getting sick of it.

    It's getting warmer here, but I know there are some of you that are still chilly, and I'm not one of those people that's averse to warm, cozy foods when it's warm out.  I also love a good make ahead crock pot meal so....everyone wins!  This chili has veg, beans, chili, and tons of spices that make the broth really delicious.

    Crockpot Chicken Corn Chowder

    Ok so here's what you need to make this week.

    And every week until it gets warm again because 1. it's easy, 2. it's delicious, and 3. cheese.  

    This was actually inspired by my friend Nathan, who sent me a message one morning and was all "do you have a recipe for chicken chowder?" and I was all "I didn't know that was a thing."  And then I proceeded to rattle off what I WOULD do if I was making chicken chowder in a slow cooker, had I known that was a thing.  

    And then I thought about it all week and MADE IT and it turned out way better than I ever could have expected.  I just kind of went with a standard broth-based-but-with-dairy version of chowder with chicken instead of any kind of seafood.  I used SUPER simple ingredients because this time of year I feel like the fancy stuff has to be reserved for parties and gifts and holidays, and the rest of the time you really need simple things that are balanced and comforting and EASY.  

    Enter the slow cooker.  And cheese.

    Crock Pot Vegan Moroccan Vegetables

    This super easy Moroccan vegetable stew is vegan, dairy free, and made in the slow cooker for a super easy and healthy weeknight dinner option! Try it with some quinoa or couscous on top for some added protein and nutrition.

    In an effort to try to maintain some kind of cognitive ability in this world where we don't have to memorize anything anymore, if a word comes up as misspelled when I'm writing I don't right click to see the correct spelling.  Instead, I backspace and type the word again until it's spelled right.  

    Except for Moroccan.  I tried three times and just failed.  

    So, the point is that I suck at spelling but I try and that's half the battle?  

    Cognitive failures aside, this vegan Moroccan vegetable stew is a WINNER.  It's healthy, easy, and full of flavor.  I love meals like this that are light but still somehow cozy at this time when the seasons are still changing but there are definitely still some cold mornings and nights BUT we start to realize that a whole winter of comfort food means JUST SAY NO TO BATHING SUITS so we really need to eat our veggies.  And this is a happy medium!  Ridiculously healthy but not straight up raw veggies.
