    New England Clam Chowder

    Or, you know, New England-ish.  I have no clue what I'm doing when it comes to regional offerings, as we discussed yesterday.  IMG_4897

    This is the second of the #superbowl recipes that I have for you this year, both seafoody to celebrate the fact that both of the teams come from places that CELEBRATE seafood.  

    I celebrate all food.  

    I originally had a plan to make this a little bit fancier - start with pancetta, use live clams, white wine, fresh thyme....all the good stuff.  But then nowhere in this city had fresh clams, even the expensive places.  And then I forgot about the pancetta.  And then I figured, it's the effing Super Bowl.  Not fussy.  Let's be really simple in this instead of fancypants.  So that's what I did!  The results were delicious, and this is an easy peasy chowder.  A touchdown, you could say.  Heh.

    Lobster Rolls

    Isn't there some kind of big golf tournament this weekend?  

    Just kidding.  

    You know that I live for some thematic food moments, so when we were talking about what to make for the game on Sunday I was all set to come up with some cutesy little something or others to serve.  Seattle....seagull bites?  New England...Updated Fish and Chips?  Patriotic....flag cake?  

    It didn't work quite as well as you'd expect.  Or maybe it's exactly what you'd expect.  Instead, we realized that BOTH of the regions being recognized on Sunday are alllll about some sexy seafood, so that's the theme.  Superbowl Seafood.  Super Bowl?  I don't know.  But we have two new seafood recipes coming this week, starting with this one:  lobster rolls!  Mini lobster rolls, to be exact, in case you're making these for an event that will include lots of other little appetizers.  They're super duper easy, duh delicious, and if you can find lobster on sale even better!

    Chipotle Chicken Pasta Bake

    Two chipotle recipes in just a few weeks!  IMG_4774

    Because you never use one can of chipotle all at once.  Your mouth would burn forever.  

    So, I'm working on this can of chipotle peppers that I opened for the sweet potatoes a few weeks ago, and I wanted a main dish that was all smoky and sexy but also could be made ahead for, say, a Wednesday.  Also, it contains meat and I have leftovers, so MEAT EATERS COME OVER.  Seriously.

    Power Vegetarian Cobb Salad

    Vegetarian Cobb Salad with Quinoa and Power Greens is one of our favorite quinoa power bowls! Inspiration from a classic cobb salad but amped up with herby quinoa and a delicious roasted garlic vinaigrette. I love this for meal prep; store all the ingredients separately and cut the avocado right before serving.

    I know a lot of people for whom every Monday kind of turns into a New Year's resolution fest - are you like that?  MONDAY is when I start to get my act together and be nicer and less dramatic and eat more quinoa.  

    Why Monday?  I have no clue.  Anyone who watched all the football on Sunday knows that Monday is just another recovery day that might involving laziness and fried foods, amirite?  

    Although, to be fair, I actually ate this on Saturday in an attempt to be slightly well behaved.  And then washed it down with 948 light beers BUT THAT'S HEALTHY.

    Double Apple Bran Muffins

    These are my favorite apple bran muffins for gifting to new and expecting moms! These apples are nourishing and keep great in the freezer for several weeks.

    Today we just have to talk about poop.  Sometimes it just has to happen, you know?  

    No but really, this is a real thing.  My mom is really teeny and sweet and dainty and proper, but also she had 4 kids with no drugs (ugh) and when you have kids weird things happen to your body because there is A KID pressing against your innards and sometimes ish gets kind of janky in there, ya know?

    So, it casually came up in a conversation over wine with my mom that my friends talk about constipation before and after pregnancy, and she was all "yeah, I know, that never happened to me.  My midwife brought me bran muffins and said 'trust me, just eat these and don't ask questions' and I was just fine!"  

    Boom.  Must find bran muffin recipe and make for every human I know who is having kids or just likes pooping on the reg ASAP.  I've made these apple bran muffins several times so far, and can't keep them in the house.  These are REALLY good, and don't have a ton of added sugar and not very much fat, which means you can 100% eat them for breakfast with no judgement from me.  Or yourself.
