Cauliflower Alfredo

Ingredients

Scale
  • 1 small head cauliflower, cut into large chunks
  • 1 tablespoon butter
  • 2 tablespoons grated parmesan cheese
  • 1 clove garlic
  • 1/2 cup heavy cream or half and half

Instructions

  1. Add the cauliflower pieces with a sprinkle of salt to a pot with enough water to cover the cauliflower by half. Cover the pot, and cook on medium to medium high (water heavily simmering) for 15 - 20 minutes until the cauliflower is very soft.
  2. When the cauliflower is cooked, add it with the other ingredients to a blender or food processor, reserving the cooking water. Blend the sauce for 1 - 2 minutes until very smooth. Add cooking water as needed to achieve a sauce consistency. Taste, and add salt and pepper to taste.
  3. Store in the fridge for a few days, or serve immediately with hot cooked pasta. Garnish with fresh herbs or extra parm if desired.
