I'm spending the day getting ready and cooking and packing and I CAN'T WAIT. We're going with some of Jay's comedy bffs and one of them has a baby who is half ASIAN which is my favorite kind of baby tied with..every other kind of baby...and he's going to wear a halloween costume and ALSO we are having Friendsgiving on Saturday and IT'S GOING TO BE AWESOME.
I'm slightly excited. If that was apparent.
Because we're travelling to a kitchen that we haven't met yet (I like knowing kitchens really well before I...enter them? No. Just no.), we're making lots of make-ahead foods that we can just kind of heat up and eat with no muss or fuss. I LOVE meals like that where REALLY all the cooking and cleaning is done before you ever sit down to eat, save for one or two dishes.
Like this. Chicken spaghetti bake - it's got noodles, veg, sauce, and meat all DONE. You can make it a few days in advance then bake it from cold to let it slowly warm through (put the dish in a cold oven, THEN turn it on), or you could freeze it until you don't want to taste freezerburn - I'll let you make that longevity call.
Or lasagna! Always a favorite, always delicious. I make a few at a time sometimes and keep 'em in the freezer.
This one is great, too - baked ravioli. Italian style dishes seem to lend themselves really well to makeaheads - maybe because marinara just gets better and better as it slowly cooks?
Rice or noodle salads are great make-ahead meals, too, like this one with sweet potatoes and blue cheese. You can legit make this entirely ahead then just microwave bowls of it to eat. SERIOUSLY easy.
Lastly, what I'm making for tomorrow night's dinner - osso bucco. I'm actually just going to make the SAUCE then simmer it for hours and hours, then grill some chicken breasts at the mountain house and pour the sauce over top and have rice and bread on the side. The hard part will be done way in advance, and we'll have a great dinner once we get up the mountain!
