Ahhhhhh Wednesday.
This morning I practiced yoga and strained my boob.
Pectoralis minor, I think, but mainly my boob. Ouch. Since I'm under 30 and don't abuse drugs I don't think I'm having a heart attack, but it could be that, too. Also today I have a meeting about some yoga teaching, regular work, a board meeting, winter social, and dinner with Jay's family.
I'm the only one who's this busy, right?
HA. Not even a little bit, I'd guess.
On days weeks months like this, sometimes you don't have the pre-washed, pre-cut veggies in the fridge for quick cooking like you should. Sometimes you haven't frozen tons of pasta sauces for lazy nights, and you don't have salad dressing in your fridge.
Sometimes you need things with NOTHING prepped that you can still cook really quickly.
In that category of cooking, these are my favorites (click the titles for the full recipe!):
Hibachi Shrimp
Still one of my most popular recipes. Use as an appetizer or protein in your main meal, and watch them vanish. Done in ten minutes, and has three ingredients.
Pepper Jelly and Cream Cheese
Another appetizer, and who doesn't need tons of appetizers in their brains this time of year? You're basically unwrapping things here, and you can skip the chilling step all together. If you'd like a bit of a firm/chill to the cream cheese, stick it in the freezer for 10 minutes and call it a day.
Classic Beef Tacos
Let's be honest, you don't NEED rice with tacos. You have carbs, meat, and veggies all in one little handy dandy packet. To make these crazy fast, start the beef. That takes about 15 minutes. While the beef is cooking, warm taco shells and prep any raw veggies you want to throw on as toppings. Get out cheese, salsas, sour cream, and pickled jalapenos if that's your thing and you're done! Prepping toppings as you stir and season the beef means tacos in 20 minutes. If you want to go nuts, start some rice in a separate pot when you start the beef and be SUPER impressed with yourself.
Steamed Baby Potatoes
These take awhile to cook - 20 or 30 minutes, but you don't DO anything to them while it happens. Start the potatoes, then prep whatever other easy-peasy meal components you'd like! These are delicious every time, and so simple.
Marinated Tofu with Ginger
I know. Weird. But this is raw tofu, with soy sauce or ponzu over it, and pickled ginger. That's it. No cooking, just assembly. It's healthy, flavorful, and FAST. Try it and get over yourself - tofu is delicious.
