There is still school. There are still chores. We're still working. But we're in the MOOD for holiday stuff, right? It's busier, there are more activities, more opportunities to not keep up the great habits we've spent all year building. Meal prep quiche is here to save us from takeout temptation.
This is another version of my absolute favorite quiche that I shared several weeks ago - the Kale Roasted Red Pepper Quiche that dreams are made of. Here, we haveย optionsย because we need our quiche to be exactly how we want it every single time. Meal prep quiche is the best kind of quiche, basically.
How to meal prep quiche is super simple, and even THAT has options. Bake the entire thing and reheat when you'd like to eat? Great. Eat at room temperature? Perfect. Prep the filling but bake the quiche fresh? It all works.
If I know I'll have time to bake the quiche when I want to eat it, I go that route because freshly baked quiche is super delicious. I also rarely make my own pie crust because meal prep is really legit when other people do some of the prep.
For this quiche recipe, we need about one cup of grated cheese and one cup of "other" fillings. Such as:
- Bacon, green onions, white cheddar
- Chopped leftover roasted veggies with provolone
- Sauteed broccoli, garlic, gruyere
- Roasted tomatoes, sliced onions, ricotta, parmesan
- Leftover grilled chicken, spinach, caramelized onions, fontina
For each of these, I chop/saute/grate the ingredients and package them in containers to keep in the fridge. I don't freeze cheese, but all of the other ingredients could be frozen for far-out meal prep!
You can definitely whisk the egg/cream mixture in advance too and store that in the fridge, then just dump/bake the quiche when you're ready to eat.
I love this quiche because it's wonderful for a holiday lunch or brunch, paired with a simple salad and as many cookies as are necessary for the life you're currently leading. It can be left out for several hours after cooking, so maybe Santa makes this early in the morning and it gets eaten after presents are opened?
However you slice it (sorry), doing some or all of the labor in advance of devouring your favorite quiche makes it taste even better.

Meal Prep Quiche
Ingredients
Basic Quiche:
- 1 prepared pie crust
- 1 cup filling veggies/meat see notes
- 1 cup shredded cheese see notes
- 4 eggs
- 1 cup heavy cream
- salt and pepper
Instructions
- Prepare your quiche filling first. This can be done in advance!
- Preheat the oven to 375F and arrange the filling and cheese in the bottom of the pie crust.
- Whisk together the eggs and cream with some salt and pepper. Pour the mixture over the quiche filling.
- Bake the quiche for 50-60 minutes until puffed and golden. Let cool slightly before serving. Enjoy!
