Ingredients

  • 2 large biscuits split and lightly toasted
  • 2 ounces sliced sharp cheddar cheese
  • 4 slices bacon cut in half to make 8 short pieces
  • 2 tablespoons butter
  • 8 large shrimp
  • ½ teaspoon cayenne pepper
  • ½ teaspoon Old Bay or other seafood seasoning
  • 1 tablespoon minced fresh parsley
  • 1 clove minced garlic
  • 2 eggs cooked sunny side up or any way you like
  • fresh fruit optional, for serving

Instructions

  • Cook the bacon in a skillet over medium-high, turning as needed, until crispy. Drain on paper towels and pour off most of the bacon grease.
  • In the same skillet, add the butter. When the butter foams, add the shrimp, cayenne pepper, and Old Bay. Cook for 2 minutes, then flip the shrimp. Add the garlic and parsley and stir for 1 minute, then turn the heat off.
  • Preheat the broiler to high and arrange the biscuit halves cut side up in a pan. Spread the bottom halves with sliced cheese and broil or toast until the cheese is melted.
  • To build the sandwiches, arrange some bacon on the bottom of the sandwich over the melted cheese. Top with the egg and then the shrimp. Close the sandwich with the top half of the biscuit.
  • Serve with fruit and eat while hot. Enjoy!
