Roasted Salsa Verde

Ingredients
  

  • 7-8 fresh tomatillos husks removed and rinsed
  • 1 serrano or jalapeno pepper stem removed
  • 1 clove garlic peeled
  • ½ small onion
  • ¼ cup fresh cilantro leaves
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon lime juice
  • salt to taste

Instructions
 

  • Preheat the broiler to high. Place the tomatillos and pepper on a baking sheet and broil for 5 minutes on each side until charred.
  • Add the roasted veggies with their juices to a food processor with the rest of the ingredients. Pulse to combine, and taste. Adjust seasonings to your preference.
  • Serve as desired. Enjoy!
