Twice Baked Potatoes for Thanksgiving!

Cheesy twice baked potatoes are an absolutely delicious make ahead side dish - ideal to keep in the freezer and heat up for special occasions!

First: Baked Potatoes! These are perfect for leftover baked potatoes. To bake potatoes, prick them all over with a fork and rub with a bit of olive oil and salt. Wrap each potato in foil, then bake at 450F for 1 hour. Let cool enough to handle, or overnight which helps the potatoes not fall apart.

Recipe Instructions:

Scoop out the insides of the baked potatoes, leaving a thick enough border to hold the shape of the potato.

Next:

Mash the insides of the potatoes with melted butter, cream cheese, and sharp cheddar.

Taste:

Add lots of salt and pepper to the mashed potato mixture; it should be REALLY flavorful!

Fill:

Scoop the potato mixture back into the potato skins - use your hands if needed to press and mound the filling. Use it all up!

Bake: 

375F until lightly browned and hot all the way through. This can be done from frozen as well!
