Doubletree Chocolate Chip Cookies

Ingredients
  

  • ½ cup rolled oats
  • 1 cup unsalted butter two sticks, softened
  • ¾ cup light brown sugar packed
  • ¾ cup sugar
  • 1 ½ to 2 teaspoons pure vanilla extract
  • ½ teaspoon freshly squeezed lemon juice
  • 2 large eggs
  • 2 ¼ cups unbleached all-purpose flour
  • 1 ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 3 cups semi-sweet chocolate chips any kind you have
  • ½ cup chopped walnuts

Instructions
 

  • Pulse the oats in a blender or food processor. In a bowl, combine the oats, flour, baking soda, salt, and cinnamon. Whisk together and set aside.
  • In the bowl of an electric mixer, add the butter and sugars. Cream until light in color, scraping the bowl as needed. Add the eggs, vanilla, and lemon juice.
  • Add the flour mixture to the egg mixture and stir by hand until almost combined. Add the walnuts and chocolate chips and stir to finish mixing the dough. Don't overmix!
  • Let the dough chill for at least 30 minutes or up to overnight.
  • When ready to bake, preheat the oven to 350F and scoop the dough onto prepared baking sheets 2 inches apart. Bake for 13-15 minutes until done to your liking. Let cool on the baking sheet for 3 minutes, then remove to wire racks to finish cooling.
  • Eat 5 at once. Enjoy!

Notes

  • 1. I left the lemon juice out of this recipe and it was just fine.
  • 2. The original recipe calls for 1 cup walnuts, but I use ½ instead and like that ratio a little better!
  • 3. For a little extra health, swap one cup of flour for whole wheat flour - it works great!
