Indian Beef and Potato Curry

First:

Saute the onions until translucent, then add the ground beef to the skillet.

Add the vegetables and seasoning ingredients, stirring everything to combine.

Deglaze the pan with water, stir to form a loose gravy. The sauce will thicken as the potatoes cook.

Simmer covered for 30-40 minutes until the curry is thick and the veggies are cooked.

Pro Tips: If you don't have Madras curry powder, use a blend of HALF garam masala and HALF yellow curry powder. Both versions work beautifully! This can be made in advance and kept in the freezer for several months.
