...which, in reality, is no different than vegan food any other day, but you'll forgive the title, yes?
As promised, we're going to go over some SO DELICIOUS recipes and discuss how they might be made vegan without sacrificing all the dang flavor.
So, like, cheese nachos won't be on the list. Sorry.
If you're not up to date, Monday we had a list of foods that are SO delicious and already vegan, and Tuesday we had a fun new Asian-style vegan meal together.
So today, let's look at some favorites and veganize them, ok?
Let's start with risotto. For ANY risotto that doesn't have sausage or bacon as the main component in it, there are two things you can do to make them vegan. First, swap out the chicken stock for vegetable stock. Then, at the end of the recipe when there might be a "swirl in a pat of butter" step, just skip that and drizzle the finished dish with really yummy olive oil instead. Clearly you won't use any cheese if the recipe calls for it. Some of my favorites are this broccoli-cheddar version (no cheddar, duh), spring veggie (sans egg), and sundried tomato. All are delicious!
Burgers: I'm not gonna lie...a good fake-meat burger can be GREAT sometimes. You can chop them up and use 'em as ground meat in spaghetti (use this marinara as a base, it's so good) or burritos, OR you can find some vegan buns and have a burger night! These roasted tomato burgers without the cheese are REALLY good - the tomatoes add a ton of flavor as a topping!
This potato salad is DELICIOUS and already vegan - great for a cookout with some Boca-esque burgers!
Soups are easy to customize too - any veggies you like with some garlic and salt plus one potato blended together yields a really nice creamy texture without any cream or milk. Nice, huh? If you want to thicken it a little more, you can add some veggie stock mixed with 1 tablespoon of cornstarch. I love this sweet potato carrot soup (just leave out the cream), or this green version with asparagus and tons of other veggies!
So there you have it. A few options for vegan dinner tonight, totally customizeable to fit your needs. Most things can do without any dairy additions, and if you have veggie stock on hand you're good to go!
