In the meantime, though, we still have to eat dinner tonight, right? Let's make something that isn't a recipe, but an idea, and can fit with exactly what shriveled veggies and freezer-burned protein you have in your house.
It'll be fun!
I've written about this "way" of making dinner a few times, but I'm always coming up with different combinations that would be super yummy, so I need you to make some of them and tell me how they are, ok?
Basically, we're making a layered dinner: one carb, topped with one sauteed veggie, topped with a small piece of pan-grilled protein, topped with...toppings.
Like this one! Spaghetti, mixed with a bit of butter, topped with sauteed spinach and garlic, topped with a piece of grilled salmon and some toasted pine nuts. Click here for that method.
Or this: couscous, topped with sliced grilled chicken (just with salt, pepper, and olive oil), topped with chimichurri. This is on way I love to make chimichurri, but use whatever herbs you have on hand!
Now: what else could we do? Here are some ideas:
- Brown rice topped with sauteed peas and carrots, topped with canned tuna, topped with fresh dill.
- Wild rice topped with sauteed mixed mushrooms, onion, and garlic in a bit of butter, topped with sliced steak and fresh parsley and crushed red pepper flakes.
- White rice topped with sauteed okra and garlic topped with white fish sprinkled with cajun seasoning or Old Bay, topped with chopped fresh jalapenos and tomato.
- Cooked short pasta tossed with butter, topped with canned tuna, shredded cheddar, chopped raw celery and onion, and black pepper.
