Is the week dragging or flying? I feel honestly like I have not enough days to get everything done before next week but also like it's definitely got to be Thursday or Friday? Weird.
Anyway, let's make dinner tonight! I told you yesterday that maybe possibly for Christmas you could make pomegranate pork and you CAN, but it's simple enough for a lovely weeknight meal any time of the year!
Let's do pork, something green, and a grain. This whole meal can be made in under an hour, which is super duper sweet.
Click on the links for the original recipes to help you build your meal! First, preheat the oven and get the pork started. We'll make our sides while the pork roasts.
Then, pick a grain! I like this simple barley and brown rice pilaf, but this cheesy barley would be especially sexy with the pork. If it finishes before the pork just keep it covered on the stovetop - grains stay warm for a nice long time.
While the pork and grains work, make a salad. I like a cold salad with two hot dishes like the pork and barley, and you know I'm fully obsessed with butter lettuce. Make any salad you like, though, and pick from creamy balsamic or walnut vinaigrette - they're my two favorites at the moment.
Now, the pork is probably done! Get it out. Let it rest. Plate the rest of the meal! Then, slice the pork, toss on some pomegranate arils, and eat!
