Vegan Potato Salad with Herbs

A favorite mayo free potato salad for all summer long! This version has tons of flavor with fresh herbs.

First:

boil the potatoes while you chop the herbs and scallions.

drizzle the hot potatoes with oil and vinegar - this is how we get lots of flavor into the potatoes.

toss the potatoes with the herbs, scallions, and lots of salt and pepper.

taste, and add more salt, pepper, and vinegar until VERY flavorful.
