rub 1 split turkey breast (2-3 pounds) with 1/2 stick butter, 2 teaspoons salt, and lots of pepper.

pour 1 cup stock (chicken is fine) in the bottom of a roasting dish with the turkey. roast at 350F for 12 minutes/pound, then test temperature.

remove the turkey from the oven when internal temperature is 155-160F. Rest for 15 minutes or so while you make the gravy. (seriously one of the best ever turkey gravy recipes!)

whisk together 2 tablespoons of flour and 2 tablespoons of butter in a skillet over medium heat. stream in 1-2 cups of turkey drippings and stock, whisking the entire time.

add salt and pepper to the gravy, whisk until smooth. slice the turkey, devour. YUM.
