First:

broil the veggies in the oven while you make the dressing.

Tips and Tricks: ~this is a great use-up for leftover roasted veggies! ~if you aren't vegan, feel free to add some cubed cheese or grilled chicken right before serving. ~this is delicious made in advance and stored in the fridge for up to 3 days.
