    Vegan Tabouli Salad

    Delicious, easy vegan tabouli salad with marinated chickpeas that is the perfect light lunch! We serve this often as a side dish for grilled chicken or baked tofu, or take it to summer potlucks for a yummy vegan side dish.

    I. Love. Summer.  

    I love the feeling of school being out. I love the heat and humidity, even when I bitch about it. I love the longer days, the smell of gardenias, going to hear music downtown, the whole cliché shebang.  

    I especially LOVE summer-feeling food.  Grilled meat with fresh or raw side dishes, that great mix of healthy and decadent, salads so fresh and crisp that they somehow quench your thirst, you know?  

    This tabouli is one of those salads for our family, and I can't get enough.  My mom used to make picnics of hummus and tabouli and pita long before those things were cool, and bring them to the pool late swim practices in the summer.  She made both with a heavy hand of lemon, one of my favorite flavors for dishes like this.

    This version of tabouli is a teensy bit jazzed up with marinating the chick peas, but that's super hands off and can be done way in advance - the longer in advance the better, actually.  The garbanzos end up creamy but still with texture and so much flavor from the lemon juice, garlic, and crushed red pepper.  I honestly can't even.

    Vegan Pasta Salad with Roasted Veggies

    Yummy vegan pasta salad is the perfect summer side dish! I make this with any seasonal veggies I have on hand, pine nuts, and lots of fresh herbs and lemon vinaigrette for brightness. Change up the veggies, pasta shape, and herbs each time for a fresh take on this yummy, healthy side dish!

    I just finished the book Hello, Summer and tbh want to start all recipes like this with OH, HELLO SUMMER, but it feels kind of redundant.

    Know that I'm thinking it, though.

    This is, to me, the pasta salad to end all pasta salads. It's light, fresh, and full of summery flavors. I love that it's vegan because lots of different types of eaters can eat it, and almost every aspect of it can be switched up based on what you have on hand. Different nuts, veggies, fresh herbs, it all works.

    Watermelon Juice with Lime and Mint

    The best homemade mocktail for summer! Homemade watermelon water (or watermelon juice) blended with lime and fresh mint is the most refreshing, hydrating, electrolyte-packed drink to sip on. It's a homemade agua fresca in 15 minutes, done and done!

    For summer!  A drink.  A refreshing drink.  

    I loathe the Starbucks refreshers.  I realize that's a harsh word considering I've never actually had one, but I can all but guarantee they're full of sugar and also refresh isn't a noun and shouldn't be made into one.  Is my opinion.  

    But!  This blended watermelon drink is actually refreshing.  It is incredibly light, incredibly quick to throw together, and so very good for you.

    I first had this years ago at the yoga studio where I worked; we called it watermelon tonic and it appeared all summer every summer.  Watermelon and lime are a great combination, the ingredients are good and good for you, and fresh mint just screams summer to me.

    Pan Fried Tofu with Thai Peanut Sauce

    Our 100% favorite plant-based weeknight dinner that we eat at least every other week! Perfect spicy peanut sauce (make it in advance!), crispy pan fried tofu, and slaw with whatever greens you have make for the most delicious vegan rice bowl dinner that is healthy and comforting.

    I don't think I've ever said this about anything before (I probably have), but this is hands down our favorite dinner.

    We have other things that we love, other things that are in regular rotation, for sure, but this is our dinner. One that we've tweaked and crafted over the years and every time we have it we kind of sink into this "it's healthy but comforting" haze of joy.

    Easy Black Beans and Rice

    This gluten free black beans and rice recipe has just 8 ingredients and is done in about half an hour! I love rice and beans for a quick vegetarian dinner, and make these black beans in advance often for an even faster meal-prepped dinner. If you have some extra black beans, black bean salsa is great to have around for snacks!
