If fish with parmesan crust and dill isn't your thing, and you thought my cornish game hen "lovebirds" were dumb, I totally get it.
Some people need meat on fancy occasions. It's ok.
I'm not mad that you think the other stuff I tell you to cook is lame.
Last year about this time I made some steak with blue cheese sauce.
Then, I told you to make it for Valentine's day, along with several other suggestions.
It was the most popular Valentine's idea of 2012.
I'm not feeling like we should reinvent the wheel, are you? I can reinvent it another day.
Today, though, let's talk steak.
For two, you need this:
- 2 steaks, about 6 oz each, your choice
- coarse salt and pepper
- 2 tablespoons butter
- 1 cup heavy cream
- ¼ cup blue cheese crumbles
Seriously so simple, people. You bring the steaks to room temperature out of the fridge for 30 minutes or so. Coat both sides of the steak with salt and pepper, and heat a large pan to medium-high heat. We want to really sear the steak!
When the pan is hot, add the butter. When the butter melts add the steaks and LEAVE THEM ALONE for 3 - 4 minutes until there is a really nice crust on the bottom.
Flip the steaks, and cook them 3 - 4 minutes on the second side, to the doneness that you prefer. If you use 1-inch steaks, this time will get you medium rare steaks. Adjust your cooking time accordingly!
When the steaks are cooked to your liking, remove them to a plate to rest. Add the cream and blue cheese crumbles to the pan, and turn the heat down to medium-low. Stir, and a sauce that is DELICIOUS will magically form.
When the cheese has melted into the cream, taste the sauce and add salt and pepper if you'd like.
Serve the steaks topped with the sauce - it's PERFECT and so delicious.
