I'm putting this under the entertaining category, because this is dang good, kids.
It's also easy - easy enough for a weeknight!
It's also vegetarian, which apparently is good for our bodies and the earth and our wallets.
Whatever. I love me some beef, but we all know that I'm a big tofu girl too!
Here's what I'm thinking (click the links for the actual recipes):
First, marinate some tofu with Worcestershire - so simple, but really delicious.
While that's marinating, make some cheesy barley because WHY THE HECK NOT - it's so easy and delicious!
Then, pop whatever veggies in the oven you'd like and roast them for 25-35 minutes at 425F. I'd suggest beets or broccoli or carrots....or why not all three? Go nuts here.
If you'd like to add a dish, I'd vote a salad or herbed garlic bread, or both - it's a steakhouse meal, after all!
For the salad, make your own dressing, grab some arugula, and cut up any other herbs you have - greens and herbs are lovely in a salad this time of year!
And the garlic bread...ahhhh....I like rosemary, but any herbs you have will be great! The butter is really what counts in this dish. Throw it in with the roasted veggies to heat up at the same time.
When you're almost ready to eat, grill the tofu and reheat the barley if you need to - don't forget to pour your favorite boxed wine!
Tofu, barley, roasted veggies, bread, and salad - I don't know about you, but I'm all set with out meat with this lineup!
Make this tonight, this weekend, or the next time you want to feel healthy slash super impressive. This does the trick!
