It was so simple and wonderful yet healthier than fried fish - not that that's EVER a bad thing.
I also made dinner with the same fish. It was so simple and fresh and lovely and flavorful.
Fish with this homemade tartar sauce and wilted spinach and baby potatoes. Basically, I'll eat anything with the sauce but we particularly loved this dinner combination.
You should probably make it for dinner tonight, is what I'm saying.
For a timeline, the potatoes will take the longest. I microwaved baby potatoes for 7 minutes, and that was IT. Since I knew I had the tartar sauce, I didn't need to do anything to enhance the potatoes - salt, pepper, and tartar sauce suited me just fine. If you'd like more of a potato "recipe," this one for steamed baby potatoes is super easy and delicious.
Once the potatoes are started, whip up the tartar sauce and preheat the oven for the fish.
Then get the fish ready to bake. While the fish is baking, make the spinach!
I used this wilted spinach recipe, but instead of raisins and pine nuts I fried a piece of bacon before I wilted the spinach. Then I cooked the spinach and garlic in the bacon grease and crumbled the bacon into the spinach because...why not? Just be sure to cook the spinach at the very last minute - we don't want it to be totally cooked.
So there we have it! Potatoes should be done, fish is baked in the oven, and spinach is wilted.
Plop it on a plate with tartar sauce and lemon wedges, and YAYYYY for cooking! This whole meal can take you 30 minutes or less, and is so delicious and healthy.
What else could we mix into wilted spinach, I wonder....?
