That's my favorite kind of coma, by the way.
If so, I have exactly the easy-peasy get-back-on-track meal that you've been looking for!
We most recently made this meal for Father's Day - we celebrated at lunch - and it was a huge hit. You prepare a few things, buy a few things, and EAT. That's it! You customize with what you like/have on hand, and move on with your life.
First, we're going to make a nicoise salad with lemon-dill tuna and potatoes. Add any other veggies you like - the more the better for a day like today when we're trying to get over the grilled deliciousness we imbibed yesterday.
Make a big batch of this red wine vinaigrette too - it's super delicious! Pour some over the potatoes once they're cooked to let them marinate a bit, then serve extra for drizzling over the salad during the meal.
Grab some pickly things, too. Capers, cornichons, olives....whatever you love!
Bread and cheese are a MUST for this meal. I like to put them out early and keep them out so that they can serve as an appetizer or accompaniment to the salad.
Finally, wine. Even if this is for lunch....wine is SO GOOD with French food. It just works. Chilled dry white works great with this meal, but I suppose water fancified with lemon/lime/orange slices would work too. Refreshing, huh?
If you make it to a French (or otherwise decent) bakery for the aforementioned bread, why not pick up some pastries for dessert? Just get a few and cut them into pieces so everyone can try some but not get too full.
I love this meal. It's perfect for lunch, dinner - even brunch with some poached eggs!
