Easy 2-ingredient shortcut hummus

2-Ingredient Shortcut Hummus is the easiest hummus recipe ever! Using the most delicious lemon tahini dressing as a base, just add garbanzo beans and BOOM, hummus.

It's the easiest hummus ever and one of my favorite "make the most use of the time you have" meal prep tips and tricks.

Way back a million years, I made lemon tahini dressing and it was one of the most popular recipes on this site for years and years. I recently updated the recipe with better pictures and instructions, and now we're going to use it to make hummus!

Vegan Lemon Tahini Dressing

Because: when I get out the food processor I almost always try to make two or three items with it, rinsing in between (like a dressing, this hummus, pesto, etc), and then washing it at the end. Garlicky sauces and dips are perfect for this multi-use meal prep moment!

So to start: lemon tahini dressing that is garlicky and lemony and rich but vegan and gluten free.

Scoop the dressing into a jar or dish, and honestly when I do this I don't bother rinsing out the food processor because the tahini sauce is going into the hummus so...who cares if there is already some tahini sauce there, you know?

Add drained garbanzo beans, some water, some salt. A big scoop of the dressing.

Now, how you serve this is totally up to you. I like pita/veggies, but I also use this on sandwiches, in wraps, with falafel...all of the things.

The bigger point, though, is that at the end of this TRULY under half an hour endeavor you end up with extra lemon tahini dressing for salads all week and hummus for similar-but-different eating needs.

Equipment

  • Food Processor

Ingredients
  

  • 2 cans garbanzo beans lightly drained
  • ¾ cup lemon tahini dressing
  • ¼ cup water
  • ½ teaspoon kosher salt plus more if needed, depends on your garbanzos

Instructions
 

  • Combine the garbanzo beans, water, salt, and dressing in a food processor. Process for 3-5 minutes until very smooth. Taste and add more salt, water, or tahini sauce if you'd like.
  • This can also be made with storebought tahini sauce, so easy and yummy!

Notes

To maximize my food processor time, I make the lemon tahini dressing first, then scoop it into a jar and add the garbanzos/other ingredients right in the food processor. Then I'm left with extra dressing and hummus but only have to wash the food processor once!
This hummus is also the perfect base for spiced beef with pine nuts, and as a part of a larger mediterranean hummus board!
