First, we'll need to start these Brussels - the bacon gets crisped, then we just braise them super quickly on the stovetop until they're tender.
While that's happening, roast some peppers and make this roasted red pepper sauce. It's perfect!
Then, pick a protein. Something mild in flavor like chicken, pork, or fish is wonderful. Sear the protein in butter, salt, and pepper in a really hot skillet until it's cooked through. Cook some kind of carb in the meantime - plain white rice or couscous is great for this. Now, we have a veg, protein, carb, and sauce. For me that's more than enough, but if you want to get fancy and add bread or salad (this tahini dressing is one of my favorites) be my guest. You're in charge!
If you play your cards right you could have this dinner done in under an hour, and you could get super make-ahead by making the sauce in advance and microwaving it just before you serve. It's up to you, but this dinner is a gem. One to be repeated over and over for sure.
