I just love this time of year - we've discussed this already in terms of fresh herbs. I was still working through some fresh basil this weekend and wanted to do something with the trillions of tomatoes that my parents grow in their driveway on the years that I don't run over the plants as soon as they are planted.
I've gotten better at backing out of their driveway now that they've lived in the same house for 7 years. It took me a minute to get the hang of it.

As a companion to yesterday's dredged chicken, I'd like to offer you an idea for a side dish that can be made in MINUTES and is delicious - Mediterranean Orzo. I made this a few nights ago with my lovely sister, Emily, based on the pretense that I had very little in my fridge and didn't feel like going to the store. The great thing about this dish is that it requires no cooking other than boiling the pasta and can be changed in lots of ways based on what you are serving with it.
