It feels like fall here. Does it feel like fall where you are? All of a sudden last weekend evenings and mornings turned COOL, and the air smells better, and EVERYTHING IS GOOD.
I mean, lots of things still suck, but at least we aren't sweating through it, amirite?
So, tonight, let's make a meal with seasonally appropriate ingredients! The great thing about RIGHT NOW is that we're still having a bit of leftover summer stuff AND new fall stuff fresh and affordable. Here's what I want to be using all the time:
Sweet Potatoes. This sweet potato couscous is one of my favorite fall dishes, and it can be eaten as a side dish or a main course. HECK, make it, chill it slightly, and serve it over greens - call it a main dish salad!
Cauliflower. If couscous isn't calling your name, cheesy mashed cauliflower could be just the ticket. Mix it up with all kinds of cheese and it'll taste different every time!
Butter Lettuce. I LOVE this lettuce. I like it really simply in a salad with raw veggies and this balsamic dressing, OR OR OR you could make lettuce wraps if you want an Asian-style meal!
Butternut Squash. Just roast it. Serve it with any meal you like. ANY MEAL. It's so stinking good. OR, add it to this pasta and you've got a whole meal!
Mushrooms. Clearly these are available year round, but they're in SEASON now. Use 'em as fake beef in these INCREDIBLY flavorful burritos, or make mushroom stroganoff! Your choice.
We're lucky to mostly live in a world where you can kind of get anything you want all the time, but you KNOW (tomatoes in the winter are an example of this) that when you buy produce that's seasonal if possible, local where available, you'll get the best price and flavor out of your purchase. GO FOR IT.
