I'm lazy this week.
Are you too? I sure hope so. If you're feeling lazy this week, then hopefully you're loving this lazy food. Like the crispy shrimp we made yesterday, this one is SO simple. Very few ingredients, tons of flavor, and quick to make.
I think I'm feeling lazy because I got home from work travel on Sunday and I'm leaving again on Friday so I really don't have the time or energy to make insanely complicated dishes. Food is kind of a survival thing on weeks like this.
That is kind of sad for someone like me.
No matter, though! All this travel means I'm eating at lots of fun restaurants and drinking too much and getting fat but kind of in a good way. Last weekend we went to Broad Street Cafe and it was just as yummy as it was last year!
Also. This weekend we're going to be in Baltimore. Where should we eat? Seriously please and thank you.
But this rice. It's REALLY good, and really simple. It can go with any Asian-style meal you like. The flavor is great but not overpowering like fried rice or something that can stand on it's own. This is just a really nice alternative to plain steamed rice.
You'll love it. Here's 3 - 4 servings:
- 1 cup brown rice (or white, whatever)
- 2 sliced scallions
- ½ to 1 teaspoon fish sauce
- 1 teaspoon sesame oil
- sriracha, optional
See? So simple. I like to use brown rice because the nutty flavor really goes well with the sesame oil, but you can use any rice you like!
First, cook the rice with the correct amount of water per the package instructions. Easy.
When the rice is cooked, drizzle in the fish sauce and sesame oil. Toss in the scallions, too!
Then, stir everything together. Taste, and add more fish sauce if you'd like! Seriously simple.
Now, Jay got kind of excited and decided that he would decorate his plate with sriracha before serving. You could probably just drizzle any hot sauce you like over the rice, but this was pretty stinking cute.
And that's it! Great fresh flavor from the scallions, nuttiness from the rice and sesame oil, and salt from the fish sauce. KILLER side dish, and so simple to make.
Seriously though....Baltimore? Help me please.
