    It's GORGEOUS here.

    Naturally I'm not outside, but I have grand plans to be in a few hours. 

    Please don't let my plans get wrecked, Earth. 

    Anyway, instead of forcing something new on you, I think we should revisit old favorites, and ESPECIALLY focus on fast/fresh/light foods.  NO ONE wants to spend their whole weekend cooking (even me, just barely), and heavy food is just kind of meh when it's lovely and sunshiny outside - right?

    Lemon Tahini Dressing

    simple vegan, gluten free lemon tahini dressing that is perfect for salads, dips, or even to drizzle over grilled chicken! this simple sauce is one of our favorite meal prep items because it has just a few ingredients and comes together quickly.

    It's a new vegan recipe, kids!

    This weekend we went to the beach for 4 days to watch Jay's little sister get married.  It was super fun and involved drinking our faces off all day every day and eating heavy food. 

    And cake.

    So, I need to share with you something that involves healthy ingredients and that could go on raw veggies. 

    This dressing.  It reminds me of home.  My parents were eating hummus and using tahini dressing before it was cool to do so, so I kind of....grew up eating this?  Weird, but true.  Pinky swear.  

    I love how simple this lemon tahini dressing is, and it comes together in one minute flat if you use a food processor.

    Light Buffalo Chicken Salads

    I keep seeing things about over-crowded gyms and how annoying it is for a month that folks are trying to be healthy.  I think, however, that at least it's a month, right?  Let 'em give it a shot - it's good for us to make positive goals!

    One of my favorite things to make at home is bar-type salads.  I love big salads with tons of toppings and crunch and flavor. These certainly fit that bill and, if you have some salad dressing and raw veggies already on hand, can be made in 23 minutes or so, start to finish.

    Oh, and, they're delicious.  So, there's that!
