    I think it is wearing on us, and I think we are adapting to that by getting used to the way things are. Which, when it comes to getting used to staggering loss of life, is fairly depressing.

    Easy Pan Seared Salmon with Skin

    This is our absolute favorite way to make salmon! A doubled-up method; we sear the salmon in a cast iron skillet until the skin gets super toasty and crispy (salmon bacon, HELLO), then broil to finish. The result is a flaky, medium-well salmon that is perfectly cooked every time.

    Welcome to the inside of my brain, wherein if something goes well a few times I declare it THE BEST with very little testing of other things, then do the same thing over and over in perpetuity because it works for me.

    So if we're being honest it's THE WAY I cook salmon, but I'm calling it the best salmon recipe because it is so, so good.

    This is our easy weeknight salmon. We have it at least once a week. We cook it the same each time BUT with different seasonings, which I think is a big key to "cooking well" without, say, culinary school. I can't cook all.the.things. but I have a few methods that I'm great at, so I change up the spices and BOOM variety.

How and when to sleep train depends on a variety of factors, and there are tons of great methods that can work for lots of families.

    Cue all of the "in these trying times..." phrases BUT GUESS WHAT I made this months ago for a magazine I write for and it only is just now making it to your eye balls.

    I can see the future, basically? OR, more likely, the best recipes are the kind that work all the time, even in pandemics.

    What we have here is: A crispy chicken dealio, made gluten free because cornstarch, PLUS the cornstarch makes the chicken EXTRA crispy without any overly annoying breading, you're welcome for that.

    Then we have a glossy sauce with orange juice, ginger, soy sauce, and stock. Broccoli for balance. Rice for ... more balance.

    1. What's your Easter plan? A whole ham (leftovers keep beautifully in the freezer!) and my top recipe, asparagus casserole, wouldn't HURT anything, you know?
    2. I started doing some extra planks when we got stuck at home due to the fact that I was literally doing zero other exercise, all of my yoga teaching went away. I didn't have a goal or anything heroic, but unintended benefit (that is, like, duh) is that my lower back hurts about 5% less, very useful in a time where I'm hunched over a screen even more than usual. Hurray screen time.
    3. Beck, the other morning: "Mama, I dressed myself!" Beck, 10 minutes later: "Mama, I had an accident because I drank a sip of water and got dressed before I went pee pee." Sigh.
    4. Will has become 1000% fixated on lids and puzzles, but can't say L's yet, so when we give him his water cup at meals he starts muttering "id id id id" over and over again until we give it to him. Baby fixations are so silly and, while occasionally annoying, I love watching them pop up.
    5. Weekend! We have been trying to make weekends feel more weekendy, so tonight we are having pizza, tomorrow DIY sushi, and lots of movies on Sunday because it's going to pour rain. I also have a cauliflower that needs some inspiration - leave some favorite cauliflower dishes for us to try!
