Mango Cucumber Salsa

I know.

You've been waiting all day.

Ever since you saw that scrumptious teriyaki pork recipe topped with SOMETHING YOU DIDN'T KNOW ABOUT you've just been dying, right?

I know.

Don't worry, though, your teriyaki pork will no longer be incomplete - enter, Mango Cucumber Salsa.

It's easy, it's delicious, it's as spicy as you can handle it.

That's what she said.

Ignore me.

Here's what you need!

  • 1 ripe mango
  • โ…“ english cucumber
  • ยฝ lemon
  • 1 jalapeno pepper
  • ยผ medium onion
  • salt and pepper

Nice and simple. ย Now, you could jazz this up with some cilantro or cumin (or both), but I really like how cool and fresh the cucumber is without any other flavors!

That's just me, though. ย Customize away!

We've talked before about how dumb I am at cutting mangos. ย Whatever, I make it happen. ย I cut the 4 sides away from the seeds, kind of like an apple. ย Then I obsessively cut little bits off the seed because it's round and my cuts are straight and mangoes are expensive and delicious and I don't waste food EVER.

But just cutting the 4 sides off would probably be fine.

Then, I use a sharp knife to remove the peel from the flesh, and cut the flesh into little strips and ultimately into little bits.

This results in a finely chopped mango, and in me being very proud of myself.

So there.

Once you've harassed the mango into cubes, finely dice the cucumber....

...and the onion....

....and the pepper (seeds in or out - your choice for spice level!).

Look how pretty everything is!

Now, toss all the fruit and veg into a bowl and squeeze the lemon juice over it. ย Add a sprinkle of salt and pepper, stir, taste, and voila!

Salsa.

This would be delicious in a trio of dips like this one here, or with a quesadilla, or with anything else you can think of!

For now, though, its going with pork.
