It's raining again, and tomorrow and Wednesday it's supposed to snow. Again.
Yesterday there was still ice on the ground from LAST WEEK'S snow, which basically never happens ever because usually it gets super warm here and no kind of freezing anything lasts for more than a day or two.
But, we probably can't eat totally carb+dairy+meat-heavy stuff two weeks in a row, according to doctors who care about our arteries? So, even though we probably still really need comfort foods again this week, here are some slightly healthier options to get us through to March, which is on Sunday. Holy poop.
The quickest ramen in the world? Yes please, and loaded with great healthy veggies. Boom. Asian foods in general, for me, lend themselves to the healthy but comforting idea.
Vegetable ragout + polenta. You can skip the pancetta if you're feeling extra well-behaved, but I wouldn't.
Cauliflower alfredo. Sure, it's pasta. But CAULIFLOWER. Not tons of butter+cream+fat. And, it's delicious!
Chicken + Kale Soup. Incredibly comforting as only chicken soup can be, but super healthy and light. This works well for me, because some times on cold days I kind of just want to....keep eating. Forever.
Burger-stuffed baked potatoes. These are a leetle bit on the indulgent side, but if you use lean beef and not a ton of cheese they're super delicious and fun.
