We got a new grill. From my parents. Because they're awesome.
So, we had them over for dinner to grill some stuff.
Because they got us a new grill.
It makes sense, don't you think?
One of the things that I made on the inaugural grill night was this lovely salad. Caprese salads are kind of a staple on menus these days and .... sometimes they're good, and sometimes they're not. It's just the name of the game, huh?
This one, though, is GREAT. The combination of smoky grilled tomatoes that are squishy and the crunchy lettuce with creamy cheese that kind of melts on the hot tomatoes....whoa.
Here's what you need:
- 1 small head butter lettuce
- 2-3 ripe tomatoes
- ½ cup fresh parsley or other herbs
- salt and pepper
- olive oil
- 2 tablespoons balsamic vinegar
- 4 oz fresh mozzarella
Nom. You could totally eat this for lunch.
So, the grilled tomatoes are totally key. Cut them in half and sprinkle them with salt, pepper, and olive oil. then, grill them cut side down on a hot grill for about 5 minutes - until they are marked and just start to soften.
While they cool, prep the other ingredients!
Chop the herbs and cut the mozzarella into cubes.
Then tear the lettuce and drizzle it and the herbs with 1 tablespoon of the balsamic - add more if you'd like! Add a few drops of olive oil and salt and pepper here, too.
Once the tomatoes have cooled enough to touch, cube them gently - use a serrated knife if you need to.
Add the tomatoes and cheese to the salad right before you serve it. Toss everything together, and hurray!
Serve this with more vinegar and salt and pepper - I only use one tablespoon because I think balsamic is kind of strong, but that obviously depends on your preference and how much lettuce you have.
See that behind it? You can't really see it. sorry. It's chicken grilled with lemons under the skin. They get crispy and start to taste like chicken skin. We'll talk about them tomorrow.
