Easy Loaded Baked Potato Soup {vegetarian}

Loaded baked potato soup is the best! This version uses baked potatoes and just a few ingredients for an easy potato soup recipe that comes together in just a few minutes. Tip: make a batch of crock pot baked potatoes to double up on meal prep: some in this soup, some for later in the week!

So, so good.

So, you know it's cold. My friend Amanda makes fun of me when I say it's freezing here, but it is currently 13 degrees outside and is supposed to get down to 8 or below tonight, so my all measures it's effing freezing. And so we need soup!

There was a restaurant we used to go to a TON in undergrad; it was right near campus but was kind of a legit restaurant instead of one of the fake Aramark restaurants that take your meal plan and have kind of the same foods at every location. This was locally owned and had this baked potato soup that was just ridiculously good. Now, I've spent years trying to recreate it and am definitely not there yet, but this version of baked potato soup is REALLY good. I cheat time by "baking" the potatoes in the microwave, and this soup is done even quicker by using leftover baked potatoes.

Power Vegetarian Cobb Salad

Vegetarian Cobb Salad with Quinoa and Power Greens is one of our favorite quinoa power bowls! Inspiration from a classic cobb salad but amped up with herby quinoa and a delicious roasted garlic vinaigrette. I love this for meal prep; store all the ingredients separately and cut the avocado right before serving.

Here's your recovery from that 3-day awful food and drink bender you just finished up last weekend.

I know a lot of people for whom every Monday kind of turns into a New Year's resolution fest - are you like that? MONDAY is when I start to get my act together and be nicer and less dramatic and eat more quinoa.

Why Monday? I have no clue. Anyone who watched all the football on Sunday knows that Monday is just another recovery day that might involving laziness and fried foods, amirite?

Although, to be fair, I actually ate this on Saturday in an attempt to be slightly well behaved. And then washed it down with 948 light beers BUT THAT'S HEALTHY.

Favorite House Salad

Our favorite all-the-time simple house salad recipe! The BEST combo of green stuff, crunchy stuff, cheesy stuff, and homemade croutons all blanketed in a delicious honey lemon vinaigrette. I love this with a crispy fried chicken cutlet as a whole meal, or as a side dish with steak and veggies.

When it comes to cooking, I have increasingly decided that one of each kind of thing is fine when it comes to things I make. I have a BEST brownie, a best pasta, a best bread, instead of constantly trying different versions of things.

With that kind of cooking, I get really good at the recipes I make, and get to tweak and adjust over the years to make them just like I like them.

That's the deal with this basic salad recipe. It's a combo of flavors that go SO well together with all sorts of textures and ingredients that make this salad really interesting.

The short version is: This is a green salad with honey lemon vinaigrette, but it's a really, really good version of a simple salad with lots of good stuff in it.

If a salad is boring I won't eat it, basically.
