- Beck's mood gradually improved over the week, but not after three days of tantrums, weepy-ness (autocorrects to sweetness, ironic), light fevers, and just enough pity from us that she now has a whole new slew of bad behaviors including only wanting to eat applesauce and demanding TV every time she is remotely near the couch. I've returned to the mean mom who only turns the TV on weekends (for her, not me, I'm not an animal), and she isn't loving it at all.
- We are STILL trying to secure a contractor for our never-happening house remodel, and last night we met with one that spent 48 minutes of our hour together talking about his children and their accomplishments. Nope.
- Also last night I made steak + squash and spinach for dinner, and YES. After our steakhouse anniversary dinner last week I'm weirdly into red meat, and I made the squash kiiiiind of like squash casserole but with less creamy stuff and tons of spinach stirred in for health purposes. It was also a low carb dinner so we win there, right? If you're into carbs (please be into carbs) and also squash casserole, this recipe from two years ago fits both bills perfectly. I love it so much. The pictures....could be better.
- Beck refers to Sophie the Giraffe as "foo-fee" and this kills me but I don't really know why.
- Thank you dear lord it is the weekend. Beck being sick made Sunday-Wednesday feel like two weeks, and I am definitely not a bad mom for saying that. After a million hours of work today I'm going out with four of my besties for GIRLS NIGHT OUT aka we will stay up until after 9pm at least. Our husbands are taking kids to have tacos for dinner, we are turning off our phones, and it's going to be the best. Then tomorrow we celebrate my dad's 60th birthday, and family time and food and wine will ensue from there. I can't wait - weekends like this are my most favorite. I'll be wearing stretchy pants and trashing my kitchen if anyone needs me.
