Anyway, instead of forcing something new on you, I think we should revisit old favorites, and ESPECIALLY focus on fast/fresh/light foods. NO ONE wants to spend their whole weekend cooking (even me, just barely), and heavy food is just kind of meh when it's lovely and sunshiny outside - right?
Right.
Excuse some of the awful pictures - it happens. This blog here is a work in progress. In awful pictures #1, remember this pickled onion salad? You can toss any veggies you like in it, but the onions are the star of the show.
Or this potato salad! It's vegan (no mayo, duh), so it can sit out for a long time with no harm done. I made this last week at the beach, and got tons of questions about it. It's a winner!
I adore mango cucumber salsa. It's a nice twist from regular tomato salsa, can be made in advance, and the flavors....oh, the flavors. I love things that are sweet and super spicy at the same time.
If you need meat (or to have anything not raw), this steak is really quick and easy and has a nice fresh flavor from the lemon. Serve it with lemon wedges for an extra tang and freshness.
Slaw is a great thing to make for a cookout or potluck because you can make it the day in advance. This poppyseed slaw is deeeeelish.
And finally, perhaps the easiest of all, tomatoes and feta. You could make this into a more substantial salad with cucumbers, olives, capers...whatever! Just throw on what you have.
Isn't that the point of all this? Grab some light raw ingredients and make them into a meal without a ton of thought. You'll have more time to PLAY, which is what these summer weekends are all about.
