Description
Yummy orange mustard vinaigrette recipe made with clementines! Grab the last of citrus season with this delicious blender salad dressing.
Ingredients

- 2 seedless clementines, peeled
- 1 tablespoon dijon mustard
- 1/3 cup olive oil
- 1/2 teaspoon salt
- 2 scallions, trimmed and cut into pieces
Instructions
- Place all ingredients in a food processor or blender. Blend until very smooth, then taste the dressing. Add a few more pinches of salt if needed, especially if the dressing tastes bitter.
- Serve with salad, chicken, fish, or anything else you can think of. Store in the fridge for a week or 2. Enjoy!
Notes
This is delicious as a marinade for grilled chicken, fish, or shrimp! It's also wonderful rubbed over kale leaves in the same method as my favorite kale salad.
