Clementine Mustard Vinaigrette

Description

Yummy orange mustard vinaigrette recipe made with clementines! Grab the last of citrus season with this delicious blender salad dressing.


Ingredients

Scale
  • 2 seedless clementines, peeled
  • 1 tablespoon dijon mustard
  • 1/3 cup olive oil
  • 1/2 teaspoon salt
  • 2 scallions, trimmed and cut into pieces

Instructions

  1. Place all ingredients in a food processor or blender. Blend until very smooth, then taste the dressing. Add a few more pinches of salt if needed, especially if the dressing tastes bitter.
  2. Serve with salad, chicken, fish, or anything else you can think of. Store in the fridge for a week or 2. Enjoy!

Notes

This is delicious as a marinade for grilled chicken, fish, or shrimp! It's also wonderful rubbed over kale leaves in the same method as my favorite kale salad.
