Chocolate Cloud Cake

I promised you the best cake in the world, and here it is!

My mom, and now me, have been making this for years and years - I think the recipe originally came from my dad's mother.

It's delicious, and not nearly as unhealthy as it tastes!

Here's how you make it:

  • 2 c. flour
  • 1 c. cocoa
  • 2 c. sugar
  • 2 t. baking soda
  • 1 t. baking powder
  • ยผ t. salt
  • 2 jars (4.5 oz each)baby food prunes, or pitted prunes pureed with water
  • 2 t. vanilla
  • 2 egg whites
  • 1 c. skim milk
  • 1 c. hot coffee
Sift together flour, cocoa, sugar, baking soda, baking powder and salt. Add prunes, vanilla, eggs and milk, stirring just until blended. Add coffee. Bake in 2 9-in. pans at 350 for 30-35 min.
Weird about the prunes, huh? ย They and the coffee make the cake super moist and delicious, and it tastes NOTHING like fruit of any kind - I promise!
We make this with the fluffy white frosting recipe in the Better Homes and Gardens cookbook - sometimes called 7-minute frosting. ย Use whatever kind you like, though, and enjoy!
Once you make this once you'll make it ALL THE TIME. ย Promise!
