Tomato Chips.

I'm not sorry, though!
This is this new thing I'm doing....roasting tomatoes at a high temperature in slices so they dry out and get kind of crunchy.
IT'S SO FREAKING GOOD.
Then you add gooey cheese and a burger? Done and done.
So, here's what you need. You have to make some of your own decisions here (I used BOCA burgers. Zing.), so try not to freak out.
- Buns, ingredients, and toppings for 4 burgers
- 5 roma tomatoes or 3 larger tomatoes
- sliced Swiss or Gruyere cheese
Easy, huh? This is just a way to dress up your favorite burger. You'll love it!
So, preheat your oven to 400F. Slice the tomatoes, and place them in a greased roasting pan or baking sheet. Spray the tops of the tomatoes with cooking spray or drizzle them with olive oil, then sprinkle the with salt and pepper.
I actually prefer cooking spray for these because it allows the tomatoes to really dry out and get crunchy. You do you, though. I won't judge.
Roast the tomatoes for 20-30 minutes until they start to get crunchy around the edges. The thinner your tomato slices, the crispier your chips will be!
While your tomatoes roast, prep your other ingredients and grill your burgers.
Now, when the tomatoes are done, remove them from the oven and onto a plate.
Turn the broiler to high!
Now, in the same roasting pan (or a new one if you love dishes), place the burgers, and top each one with 4 or 5 tomato chips.
Then top the tomatoes with lots of cheese.
Place the burgers under the broiler until the cheese is bubbly, for 3 minutes or so.
YES.
Now, I served this without any condiments because the tomatoes and cheese were so flavorful and ooey-gooey, but serve these however you'd like! Lettuce and onion were perfect for us.
