    Apple Blue Cheese Flatbread

    It's a fall flatbread!  IMG_4014

    Because we're basic white people up in here and when it's fall we eat apples, ya know?  

    True story:  If you notice in these pictures, the edges of this gorgeous little meal are a little....dark.  Because.  I made this on a Saturday, which I try not to do because Jay is distracting and I wander around and forget things that are in the oven and have to start over and it just makes a lot more sense for me to photograph things when he's not around.  BUT we had had a few really nasty days in a row and this particular Saturday was nice and sunny and so I felt the need to take advantage of the lovely light.  

    And, instead of simply distracting me, Jay and I ended up having a very heated conversation that ended up with both of us in tears.  Literally while these guys were cooking.  It was GLORIOUS.  I mean, you really couldn't have planned it any better.  Casually chatting while cooking and BAM let's talk about all the really really important life stuff that we're figuring out and we have to FIGURE IT ALL OUT RIGHT THIS VERY INSTANT otherwise the world will end.  

    Instead of the world ending, the flatbread burned.  And we ate it anyway, and all was right with the world.

    Easy Salmon en Croute

    Guys I have no idea if this is anywhere close to the real French version of this dish, I just titled it as such to be fancy.  IMG_3846

    I made salmon wrapped in puff pastry with 4 ingredients!  I mean, seriously easy, and puff pastry and salmon together are just SEXY.  Plus, the pastry cooks in about 20 minutes, so once you get the salmon/pastry in the oven you can make a super quick side dish and have dinner ready pronto.  BUT it's puff pastry and seems fancy, ya dig?  

    Weekend food, or weeknight food if you're feeling fancy and/or starving.  This isn't exactly what I'd call a light meal.  

    Unless you mean it lights up your life, in which case YES.  This is a really light meal.

    Jalapeno Pimento Cheese Pinwheels

    Healthy Banana Bread with Oats

    This healthy banana bread with apple sauce and oats is seriously delicious AND full of nourishing ingredients. Whole wheat flour and honey round out some powerhouse healthy ingredients, and this banana bread is quick and easy to make and keeps really well in the freezer. A gift to future you!

    You know that thing where your husband goes shopping with you and purchases bananas because OMG HE LOVES THEM SO MUCH and then doesn't eat a single one and then they turn black but they've been in the fridge so you're pretty sure they won't hurt anyone so you decide to make banana bread?

    Anyway, we bought these bananas then WENT TO HAWAII.  Of course.  And they totes turned black, but I'm pretty sure that was because they were in the way top of the fridge which tends to freeze things.  Then I moved them and they thawed?

    Curry Chicken Dip

    We, like, totally need a new appetizer for New Year's Eve.  Or Christmas parties that are still happening this weekend?  I've heard it's a thing. IMG_9221

    I made this last week for Christmas - on Christmas Eve my family bounces around from various church services and we eat appetizers and watch Elf and talk too loudly, and this just WENT with that kind of a night. It is probably one of the most simple things I've ever made, but the flavor is seriously delicious. 

    Let's waste no time.  I give you....Curry Chicken Dip.
