    Ok, let's talk about shortcut ingredients.

    Seasoning packets, canned cream-of-xx soups, bottled sauces for slow cooker meals? THEY ARE ALL AMAZING.

    And yet, there's a little pocket of humanity that's all "I prefer to make my own, use natural ingredients, shit all over your shortcuts in the name of my clean-eating ego."

    Well, no offense to those folks, but pre-made ingredients are AMAZING and can coax some really yummy flavors out of very regular foods.

    Example: ranch dip seasoning sprinkled all over chicken before grilling. Definitely do that.

    Crock Pot Tortellini Chicken Soup

    One of our favorite all-the-time slow cooker soups, tortellini chicken soup! This is a super easy, all-in-one dish with pasta, chicken, and spinach. There's no searing, hardly any chopping, just one Crock Pot, a few hours of waiting, and dinner is done! This is not terrible at ALL with some homemade focaccia with pizza dough for dunking.

    I absolutely can't believe it, but almost exactly one year ago my sister and brother in law came over and brought dinner, a slow cooker tortellini situation with chicken and tomatoes and cream. It was delicious.

    We joked about how school would probably be cancelled starting that Monday (they're both teachers), joked about handwashing, joked about...everything.

    About 36 hours later the entire world shut down and we didn't see each other for months.

    Cabbage Roll Soup

    Cabbage roll soup is a low carb soup version of traditional cabbage rolls; ground meat, cabbage, sweet, tangy tomato sauce. This recipe has just a few ingredients and comes together in half an hour or so. It's a great soup for freezing or meal prep - leftovers are delicious!

    It's time for a super easy new cabbage and beef soup recipe.

    One of those recipes that is comforting, cozy, filling (with bread dunked into it obviously), but requires no last minute rushing around to get food hot + crispy. It's 2021 on the last day of DJT's presidency in the middle of a pandemic and honestly we need food that just stays, you know? No emotional fortitude necessary, just an easy soup recipe.

    French Onion Soup Bites (Phyllo Cups)

    Simple, elevated New Year's Eve (or anytime!) appetizer bites that are perfect to prep in advance and so simple thanks to the use of frozen phyllo cups! Tender, beefy caramelized onions, gooey cheese, and crispy pastry cups make this the PERFECT party appetizer!

    (Random thought: Omg Baby It's Cold Outside and also the controversy about that song. Currently not ok and also historically fine because that's how people used to be/talk/sing, I think. I've noticed that people have a really hard time with two emotions coexisting, probably will be a theme of mine for the rest of my life, talking about that more.)

    So, Fancy Appetizers. How do we feel about them? Back when we were catering we made SO MANY bite-sided things that we got completely burned out on the assembly of them. We now do parties with lots of dips and spreads, easy things that can be made in advance and served at room temperature, like pimento cheese.

    BUT, I also love bite-sized appetizers for parties. I still make them, but I do usually save them for smaller gatherings that don't require 120 of anything.

    This is the perfect small batch appetizer with a great combo of prep-ahead, bake last minute.

    The layers for French Onion Soup Bites go like this:

    • Frozen phyllo cups, a very smart thing to keep in your freezer.
    • Caramelized onions in beef broth, aka tastes exactly like French onion soup.
    • Little square of Swiss or Gruyere cheese, baked over top for an ooey-gooey, soup-adjacent bite that is seriously just SO good.
    • Tastes like Trader Joe's French onion soup and Panera French onion soup all at once and just HELL YES to all of that, you know?

    Sausage Wild Rice Soup

    This wild rice soup has sausage in it for extra oomph and flavor in the chilly months! This is one of my favorite meal prep soups and can be frozen as well - make a double batch and enjoy the gift to your future self when you thaw out your already-made dinner! This soup is thickened with cornstarch instead of a flour to make it a gluten free soup recipe. HIGHLY recommend a batch of no-knead bread to go with this.

    It's FREEZING here. 

    No, but really. Multiple nights under 30 degrees F this week = the natives are LOSING it. We live in South Carolina, after all. The south. Warm. Stuffy. No fall. Lots of summer. Sweat. Humidity. You get it.

    So when it's this cold (and, yes, I know some of you have way colder lives than this, I understand how different climates work), and dark at 4pm, and we're decorating for Christmas between snuggling with our newborn and battling our toddler, we totally completely absolutely for sure need a perfect easy soup to get us through the winter.
