    Hello and welcome to "this is a dinner that is very easy to make in half an hour, trust." Aka my favorite kind of recipe.

    When it comes to dinner, a salmon rice bowl (or any kind of salmon with rice dinner tbh) is something that we eat AT LEAST once per week. I buy salmon, we always have rice, and then we think on what we want the bowl to taste like - Asian sticky soy sauce, sundried tomatoes over everything, or lemon butter because lemon butter is pretty much always the answer.

    Easy Pan Seared Salmon with Skin

    This is our absolute favorite way to make salmon! A doubled-up method; we sear the salmon in a cast iron skillet until the skin gets super toasty and crispy (salmon bacon, HELLO), then broil to finish. The result is a flaky, medium-well salmon that is perfectly cooked every time.

    Welcome to the inside of my brain, wherein if something goes well a few times I declare it THE BEST with very little testing of other things, then do the same thing over and over in perpetuity because it works for me.

    So if we're being honest it's THE WAY I cook salmon, but I'm calling it the best salmon recipe because it is so, so good.

    This is our easy weeknight salmon. We have it at least once a week. We cook it the same each time BUT with different seasonings, which I think is a big key to "cooking well" without, say, culinary school. I can't cook all.the.things. but I have a few methods that I'm great at, so I change up the spices and BOOM variety.

    You're like...this is not very inspiring it sounds like you only know how to do this one thing.

    Dill Roasted Salmon Salad Kit

    Today we have a gift idea! 

    A gift idea that was gifted to us once, in fact. Once, long ago, while I was pregnant with Beck, Jay broke his leg in three places on the first day of vacation. It was horrendous, and he still is dealing with pain from the injury and planning to have a third surgery to do some more correcting of what can only be described as a crappy first attempt at fixing him. 

    In those early weeks of healing, one of my yoga students at the Y brought this meal to me one day at the gym. It was SO good and one of the most thoughtful things she could have done. The end result was a salmon salad with orzo, but she packaged everything separately and cooked the components perfectly so that the salad was great cold and we could mix and match to make plates exactly the way we wanted. I created a version and love this idea for a gift for someone who needs it, but it's also great to prep on the weekend and have for lunches and dinners all week. The salmon DOES get slightly fishy when eaten cold, so you could definitely cook the salmon right at the last minute or even sub chicken, but I don't mind the cold salmon flavor at all.

    Salmon Lettuce Wraps

    I made you cake!  Savory, salty, crispy seafood cake topped with a tartar sauce that is just.so.good.  At restaurants I'm always tempted to order crab cakes but rarely do, and here's why:  if I get even the slightest crunch that indicates shell, I don't want to eat anything else at all and become hungry and annoyed and sad.  So this solves that.  With salmon!

    You could totally make these into burgers btw.  

    But!  This totally feels like summer to me, and has two important characteristics that are important to us at the moment.  First, they're relatively low carb.  There are some breadcrumbs in the cakes, but not many, and we went with lettuce wraps for health and flavor.  AND, we used canned salmon here for frugality.  I'm actually a big fan of canned fishes; they taste great, are inexpensive, and are great for recipes like this where the fish gets so cooked that a super fresh piece would almost be wasted.  

    We had these for lunch on a Saturday recently, and it was such a great mid-day meal.  But now I'm thinking..brunch.  With a runny egg on top?  Can eggs go with seafood?  Seafood can go with a bloody mary, that's for dang sure.

    Bok Choy Farro Salad + Salmon

    It's one of my fav things about my birthday, being born on the first day of spring.  Or the second day, however you look at it.  Our "spring" has already been kind of weird, we had an 85 degree day last week and temps in the 30s the past few nights, and Beck just has no clue how to dress for this weather and I keep telling her layers, but do kids ever listen?  IMG_9074

    Nope, they don't.  

    This salad, though is great for all temperatures.  It's super easy because you only cook the farro and the salmon, and the dressing reminds you of Asian Chicken Salad but less sweet and less middle school, and raw bok choy needs to become a thing in your life RIGHT this instant.  It's like a crunchier, more watery cabbage, in a good way because sometimes raw cabbage can be a little bit raw, amirite?  

    Plus, seared salmon.  Buttery and healthy and sexy.

    Easy Salmon en Croute

    Guys I have no idea if this is anywhere close to the real French version of this dish, I just titled it as such to be fancy.  IMG_3846

    I made salmon wrapped in puff pastry with 4 ingredients!  I mean, seriously easy, and puff pastry and salmon together are just SEXY.  Plus, the pastry cooks in about 20 minutes, so once you get the salmon/pastry in the oven you can make a super quick side dish and have dinner ready pronto.  BUT it's puff pastry and seems fancy, ya dig?  

    Weekend food, or weeknight food if you're feeling fancy and/or starving.  This isn't exactly what I'd call a light meal.  

    Unless you mean it lights up your life, in which case YES.  This is a really light meal.

    Spicy Salmon Salad + Charred Corn + Cilantro Drizzle

    We've been eating more salmon recently.  Like, probably once a week due to the fact that I'm selling it a lot more.  People want their Omega 3s!  IMG_3107

    Or maybe they're scared of cooking fish at home, I don't know.  My kitchen doesn't exactly smell GREAT after it happens, I'll admit that much.  Don't fear cooking fish, though!  I use this method that I showed you in another salad almost every time I make the stuff, and it's utterly foolproof.  The rest of the salad is super simple, and the entire meal can be done in 30 minutes if you don't dilly dally.

    Springtime Citrus Salmon Salad

    So, I work at this cafe we have in the back of my yoga studio a few times a week, and once a week we make salmon.  It's really a salmon salad with a lemon vinaigrette and some nuts and feta and all kinds of stuff, but this week I was just THINKING SALMON, and I never eat the salmon we cook because we sell it so fast, so I hiked my booty to the grocery store, bought some effing salmon, and citrused it UP, yo.  IMG_1474

    I love every single thing about this salmon, and Jay likes every single thing except the olives, which is fine because I ate his.  Fair, yes?  The method for cooking the salmon basically ensures juicy flaky fish, and the citrus zest on top at the end?  Fresh and clean in a non dirty way.  IMG_1477

    Salmon with Miso Sauce

    Add sriracha to salmon if desiredOh man.

    This is one of my favorite things ever to eat.

    When we lived in Japan, there was this tiny lunch place right near my dad's office.  It served something similar to this dish:  rice topped with a nearly-rare piece of salmon topped with a delicious miso-based sauce.

    Kill me now.  Why don't we have lunch options like that in this town?

    Anyway. This is simple, flavorful, and so simple for a weeknight when spaghetti or chicken fingers just won't do.  It's delicious enough that you could use it for entertaining, but can be done start to finish in 15 minutes or so.

    Greek Yogurt Coleslaw with Poppyseed Dressing

    THE BEST slaw for fish tacos recipe ever! Just 6 ingredients make this creamy, tangy, no mayo coleslaw one that you'll make again and again. I love this over fish tacos with peach salsa and sour cream guacamole, or with a grilled chicken dinner!

    Will has started to do this thing where if he is unsatisfied with something I offer for a snack he gives me a texture clue as to what he really wants. So if he wants yogurt it's "I want something smushy," pretzels "I'm thinking of a cwunchy snack," and so on. It's hilarious, and I have no clue where he came up with it.

    BUT, what I'm thrilled he's figured out is this: foods need different textures. So if we're talking about a soft fish taco, some crunchy slaw to top it is exactly the key to wake it up a little bit.

    This particular slaw goes with just about anything: on top of BBQ sandwiches, in fish tacos, as a side dish to grilled chicken with corn on the cob. It's great with any cabbage you like, and the dressing is also delicious on green salads!

    Fresh Peach Jalapeno Salsa

    Delicious, refreshing homemade tomato peach salsa! This recipe is made right in the food processor and can be made with fresh or canned peaches. The tomatoes, peaches, and jalapeno combine with lime juice for delicious, bright flavor that is delicious on chips served next to sour cream guacamole for a fun party platter.

    Ok, where do we fall on fruit in our salsa? I am team YES to pineapple pizza, YES to fruit in salsa, all the sweet/savory combos in the world.

    This peach salsa is super simple because we make it right in the food processor, aka NO CHOPPING. The end result is somewhere between a salsa and a peach pico de gallo - fresh, light, with TONS of flavor.

    I make this all the time to have as a snack with a cookout or pool party situation, but it's also a really great topping for fish tacos or weeknight seared salmon - a little fresh, islandy vibe even in colder months.

    (PS, you can definitely make this with canned peaches year round!)

    Vegan Marinated Mushrooms

    One of our favorite vegan mushrooms, these vegan marinated mushrooms are SO YUMMY and the perfect vegan appetizer to add to a party spread! They have just a few pantry ingredients and are done in 30 minutes, but last for weeks in the fridge!

    I. Love. Mushrooms. Like, a lot a lot.

    These mushrooms in particular will always and forever remind me of Christmas, even though my family never had them. I think this is a total throwback recipe, 80's or 90's or something - did you eat these as a kid? My next door neighbors in Japan made these for almost every holiday, and I LOVED them. I think they used Italian dressing and canned mushrooms, no shame in that game, and the chewy mushroom in the tangy vinaigrette was just my favorite thing ever. 

    I'm all about anything tangy or pickled, and I think these are such a great addition to a holiday party. They're so light and bright and a perfect complement to the heavier dishes that we have this time of year. I like having them as part of an appetizer spread with some pimento cheese or buffalo chicken dip; they're vegan and gluten free so everyone can enjoy them.
