    Garlicky Spinach Chicken Bake

    So, I had this great plan to make some kind of cheesy rice baked thing with chicken, which for whatever reason is kind of all I want to eat right now with this cold.  Comfort food for the win, man. IMG_5105 

    But then Jay was coming home and I needed something that was moooostly vegetarian and pretty healthy because that's his desire these days for food, and I like him, so I try to cook things that he likes.  

    Hence: this.  Super duper easy and fresh and flavorful chicken and spinach.  It's really simple, but the flavors are great all together.  As for how to use this?  We've done it over quinoa, tortellini, and just plain with buttery toasty crunchy bread for dipping.   ALL are great, so you really can't go wrong.  Most of all, this is super duper quick; by the time you make quinoa or whatever you'd like to serve with this you can have the spinach dish almost completely done.   Bonus points on time if you use leftover chicken!

    On Snow

    wpid-20150224_093316_1.jpgIt's snowing here!  Very lightly, but we woke up to schools closed and this very lovely dusting all over everything.  

    The dogs were ecstatic.  

    I've said over and over again that I love snow more than most adults should - the whole maybe-missing-work is great and all, but it's just so peaceful.  The silence that happens when people are forced to or choose to stay inside?  The slowing down of everything that naturally occurs?  It's breathtaking.  Like everyone takes a big exhale all at once because for once we CAN'T be as rushed or as scheduled as we force ourselves to be, even if we wanted to.

    Easy Loaded Baked Potato Soup {vegetarian}

    Loaded baked potato soup is the best! This version uses baked potatoes and just a few ingredients for an easy potato soup recipe that comes together in just a few minutes. Tip: make a batch of crock pot baked potatoes to double up on meal prep: some in this soup, some for later in the week!

    So, so good.  

    So, you know it's cold.  My friend Amanda makes fun of me when I say it's freezing here, but it is currently 13 degrees outside and is supposed to get down to 8 or below tonight, so my all measures it's effing freezing.   And so we need soup!

    There was a restaurant we used to go to a TON in undergrad; it was right near campus but was kind of a legit restaurant instead of one of the fake Aramark restaurants that take your meal plan and have kind of the same foods at every location.  This was locally owned and had this baked potato soup that was just ridiculously good.  Now, I've spent years trying to recreate it and am definitely not there yet, but this version of baked potato soup is REALLY good.  I cheat time by "baking" the potatoes in the microwave, and this soup is done even quicker by using leftover baked potatoes.

    Homemade Pasta + Fresh Tomato Sauce {valentine's day}

    Well, here we are.  Another year, another suggestion for STAY IN COOK TOGETHER rather than a restaurant date on Saturday night.  This year:  project food.  IMG_5018

    I love project food.  You might have noticed.  I think that restaurants are GREAT, but I really also think that restaurants are annoying on any holiday, and especially a day dedicated to...love?  making single people feel bad?  I really don't know.  

    How FUN, though to make something that you'd usually buy in a box totally from scratch and then eat it together in your pjs and uggs from the comfort of your home with no shitty service and overpriced 3-course specials to make you annoyed?  Very fun, that's what.  

    I've been dying to make pasta forever, and we decided that Valentine's day was the perfect time to show you how it's done.  As a note, I did ALL of this by hand.  No mixer, no food processor, no roller.  Actually, not even a rolling PIN because I don't own one, but that's neither here nor there.  Overall, I couldn't be more thrilled with how this turned out, and it wasn't hard at all!  There's definitely some manual labor involved, but none of the steps take a ton of time and you can switch off kneading and rolling the dough when your arms get tired.  #teamwork
