Pesto pizza is one of my family's favorites, and it's SO easy - you can make your own, like I do here, or you can buy your favorite jarred pesto from the store - I have some pre-made sundried tomato pesto in my fridge right now, and WHOA. So delish.
My mom makes her own crust, but she's just showing off. Most delis have dough you can buy and bake whenever you'd like!
In any event, spread an even layer of pesto on your pizza dough right before baking - I like to leave a pretty big crust and brush it with olive oil and sprinkle it with coarse salt - yum!
Then, layer your pizza with any thinly sliced raw veggies that you like. Tomatoes, peppers, and onions, go really well together AND with the pesto, but you can add whatever you'd like!
Don't forget to top it with tons of your favorite pizza cheese, then bake the sucker. 425F for about 18 minutes is our method of choice for a crunchy crust and cooked toppings, but use whatever standard pizza directions makes you sleep well at night.
This is a little individual pizza my mom made for my dad, and how CUTE! The toppings are so healthy that eating a 10-inch pizza is totally legit.
This is a PERFECT weekend dinner. You can easily pick up all the ingredients you need and make it in a snap tonight, or you can make homemade crust and pesto yourself!
