Remember when we went to Broad Street Cafe awhile ago in Durham and ate edamame hummus and died of happiness?
I done made it at home.
For realzies. The edamame, besides adding lots of great nutrition, offer a really light texture to the hummus that you don't get with an all-bean version.
I PROMISE you'll love this. Give it a whirl ASAP!
Note: I have made this with all edamame and with half beans, half edamame, and I prefer the second version. You could try it both ways and determine which is your favorite!
Here's what you need:
- 1 cup shelled, cooked edamame
- 1 can white/navy beans, drained and rinsed
- 1/2 lemon
- 1 clove garlic
- 2 sprigs fresh mint
- 1/4 cup olive oil
- salt, to taste
I start with just a drizzle of olive oil and then add more as I move through the blending/tasting/blending process.
Once it tastes perfect to you, serve this with chips, pita, crackers, veggies....whatever!
