It's healthy and quick and easy, though!
This, my friends, is grilled chicken with chimichurri and your choice of grain or carb on the side. It's simple, and FAST.
Remember a long time ago when we made Argentinean food with chimichurri? SO good. If you don't feel like clicking to that post, here's what you need for the chimichurri:
- 2 cups herbs - parsley, mint, basil, taragon, cilantro...whatever you'd like!
- 1 pinch crushed red pepper
- 1 pinch sugar
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 1 clove garlic, peeled
- salt and pepper to taste
- water, to thin, if needed
Put all the ingredients into a food processor and pulse them until they're smooth - add as much water as you'd like to make a thin paste. YUM.
Then, cook your meat and grain. I like chicken with salt and pepper sauteed in a pan, but you can definitely grill if you have the time go head outside! Fish or shrimp or steak or pork or tofu (I should have just said anything) work great here as well!
For grain/carb selection, I had some sweet whole wheat couscous that I used. Quinoa, farro, or Israeli couscous would be wonderful here, too! Cook it just like the package says and add a bit of salt and pepper once it's cooked.
To serve, slice your meat into pretty slices (or flake fish if that's what you're cooking) and arrange it over a bed of grains. Top the whole plate with chimichurri, and congratulate yourself on a great dinner in zero time.
