I think all days should be fun.
If, per chance, you'd like to have some of your nearest and dearest over for an impromptu happy hour sometime this week, here's what I suggest you throw together for a super duper fake-fancy appetizer.
CAPRESE SKEWERS!
Yep, I said it.
Look how cute! And you need very few ingredients:
- cherry tomatoes
- cubed mozzarella cheese
- basil leaves
- balsamic drizzle (optional)
So, this is high tech, people.
you put all the ingredients on sticks, then drizzle with the balsamic, if you'd like.
I recognize that this isn't the most sophisticated thing in the world in terms of actual cooking, but DANG these flavors go well together! You could add olives or deli meats too to really amp things up - fun!
This is perfect for random weeknight get-togethers, which can be a great way to blow off steam in the middle of a work week!
If you'd like to make your own balsamic drizzle, pour some balsamic vinegar into a saucepan then add just a sprinkle of brown sugar. Turn the heat to medium, and let the vinegar bubble gently for a few minutes until it's thickened and reduced by half. Stir this occasionally and serve when you're ready.
Cute serving alert! Put dried beans, unpopped popcorn, or rice into vases to serve anything on a stick. Easy, and SO cheap.

Super fancy and easy. It reminds me, I went to this resturant this weekend that served a "bite" of cheese along with the normal bread/olive oil deal. I was surprised when I realized the cheese was paired with a small square bite of yellow bell pepper. ("Romantic" lighting made it hard to notice the pepper!) Anyways, it was actually really good together!! Just an idea for the next time you go fancy 😉

This is my go to appetizer for any pot luck or Christmas party (obviously because of the colors) but I use the little tiny bocconcini mozzarella balls. Great idea!!
