Look, I know you're not all in relationships, or you have kids and believe that you have to be young and childless to celebrate Valentine's Day, or whatever other excuse you have for hating this particular holiday.
That's fine!
I, however, think it's a great time to celebrate anyone you love, and I celebrate people I love with food.
I also celebrate weekends, Mondays, deaths, births, raises, housecleaning, and adult acne with food.
But, I'm weird like that.
Anyway.
I rarely use recipes, but I'm not great at baking and these cookies are just SO good. Paula Deen knows how to work with butter and sugar.

I always make a double batch of the cookies, they're THAT good.
Then, for some extra pizzazz and because pink is pretty, I mix 1 cup frozen raspberries (or any berry in the world that you like) with 2 tablespoons granulated sugar, 2 tablespoons powdered sugar, 2 tablespoons butter, and 1 teaspoon lemon juice.
I mix all that in a pan over medium heat until it melts and bubbles and gets delicious.
If I'm feeling REALLY fancy, I add a sprinkle of black pepper and a glug of red wine. Those two things take this sauce to a hugely new fabulous high level.
Raspberry sauce is really good. After that, I just drizzle it over the cheesecake cookies and try not to eat all of them before anyone else gets to!
