Awhile ago I made some peach salsa when I served fish tacos. It was delicious, and healthy as it was!
The problem with salsas is that they are usually eaten with salty, fatty chips - delicious, but not super duper amazing for one's figure!
For this variation, make the peach salsa by clicking here - just leave out the salt and add JUST A SPRINKLE at the end if you need it. I don't think you will, though!
Also, use fresh peaches or peaches in light syrup or their own juices - check the calorie count and sugar count on the can you buy!
Instead of using store-bought chips, I have two options for dippers.
- Buy salt-free pretzels. They'll still have some salt in the dough, but no salt on top, which will reduce the sodium count.
- Make your own tortilla chips! Buy flour or corn tortillas (look for the fat free kind and CHECK LABELS - not all brands have the same number of calories per tortilla!). Cut the tortillas into wedges and spritz them lightly with cooking spray - I like the taste of the Olive Oil kind, but use whatever you have! Sprinkle on a tiny bit of salt and some chili powder, then toast until golden and crispy. If you don't have a toaster oven lay the "chips" on a broiler pan or baking sheet then bake at 400F for 5-10 minutes until the chips are crispy and golden.
Enjoy! Chips and salsa doesn't have to be off limits, but simple changes can make EVERYTHING you're eating healthier, which ultimately means you get to eat more of it!
